Fancy veg side dishes

Does anyone have any good veg sides for Christmas lunch (turkey etc) that could be transported roughly 30 minutes to someone’s house and kept warm?

I’d love to take something unusual or fancy, involving British veg if possible.

I do sprouts pan fried with bacon and chestnuts.

Really good cauliflower cheese with mature cheddar

Roast parsnips with honey

Not fancy, but mashed swede with a ton of butter. Reminds me of Christmases as a kid.

My favourite is braised red cabbage with apples. It also develops in taste so it would be good to make, transport and keep warm.

Savoy cabbage with butter, black pepper and carraway seeds.
Delia's parmesan roast parsnips.
Sprouts with chestnuts.

Do you need to keep them warm en route or are you heating them when you get there?
Cauliflower cheese but don't overcook it. Keep the sauce hot in a flask and put it into a hot oven or grill to go crispy.

I partialy cook roast potatoes then finish in the air fryer while the Yorkshire puddings cook.
Puree swede is delicious

This Swede, leek and apple bake, delicious and easily transportable.

I think you need to cheek what veg the host already had planned so as not to double up.

I do a gorgeous creamy cheesy leeks. It's a Jamie Oliver recipe. It uses mature cheddar, cream and Brie and it's so decadent and delicious.

JurassicPark4Eva · 14/12/2024 19:13

Red cabbage with apple
Cauliflower cheese - I make a showstopper every year
Honey glazed carrots
My Papas mushroom sauce 🤤

Not particularly unusual, but amazing when done well

Oldraver · 14/12/2024 19:14

I do creamed parsnips (same as mashed potatoes) and cook them in patty tins

Thankd, yes need to keep warm en route - might not have oven space when we get there. Agree swede is delicious 🧑‍🎄

Thanks for all the replies. I’d love a recipe for red cabbage with apple if anyone has one.

Delia’s red cabbage recipe is delicious. I make a ton of it and freeze portions for several more roast dinners.

soupfiend · 14/12/2024 22:19

Also if the host has a slow cooker, just plonk it all in there to sit there warming away, or take a slow cooker with you

By all means go a bit fancy but don't go too far - too many clashing flavours ruins a meal - bring out the flavours by all means but if several different people are bring a dish and all wanting to go for it...

Strong cheese has no place on the same plate as gravy. That's a hill I will die on.

I was wondering about Tara Ramsay’s butternut squash risotto but that involves cheese! So perhaps not…

Oh me too! Very few people seem to eat it these days and certainly not at Christmas. Lots of butter and white pepper. We always had that and sprouts with Christmas dinner. I still love it with a Sunday roast.
