So I am getting organised to bake some treats for gifting and for house.
I would love if anyone has a favourite easy, fool proof fudge recipe and thinking maybe some tiffin? or Something else easy but jazzy/special?

Also planning to do sausage rolls for the house. If making to freeze ahead, do you assemble them then freeze or do you bake them first then freeze??

I make Speculoos cookies (very similar to Biscof) & bake some of the dough to make a Biscof cheese cake base. Iv used the same recipe for over 20years & it's never let me down. Except when I tried to tweek it 😅 My DD says it wouldn't be Christmas without them.

Rum balls sound delish!

I like the idea of speculoos then using as cheesecake base aswell, cheesecake might be on dessert list as goes over well with the adults. Always do jelly/trifle fir the weans.

I never bake sausage rolls before i freeze them, but I do bake straight from frozen day of.

Freeze uncooked sausage rolls on a tray and once frozen pop them in a freezer bag.

I make a lot of these mince pies which are incredibly easy and wonderful.

Also ginger millionaires shortbread. We like a lot of ginger.

Biscotti make great gifts.

This is easy to handle and a firm favourite here. I don't make it into bunting or ice it. I just cut it into stars and people and put in glass jar.

I make those chocolate fudge crinkle biscuits too - they’re so easy, tasty and cute.

I use Delia’s recipe for sausage rolls (Etty’s) and freeze baked, as she instructs. Defrost for one hour and reheat in the oven for 5 mins. They are absolutely delicious.

Chocolate bark is a winner, I do a great one with salted peanuts. It looks wonderful and tastes like a Snickers

Lebkuchen. V easy really. I decorated it with white chocolate (just dipped in melted white chocolate). The biscuits themselves are quite plain so they need the added white choc or icing sugar as decoration.

I've frozen half for next week so hopefully that will work.

The dough will feel dry but persevere. The only time iv had bad results was when I tweeked the recipe. I also tend to roll the dough thin (like rich tea's), which gives a nice snap.

Omg I never got back on here over christmas as flat out! Hope you all had a lovely christmas and enjoyed all your bakes!

I ended up making the rum balls which were delicious! Though I split the mixture so 400g fruit cake, and 200g dark choc. one lot I added the rind of 1 clementine and 40ml cointreau and rolled in choc vermicelli. The other I used rum and rolled in coconut.

I made sausage rolls using a recipe on IG and the kids liked those.
I didnt get making mince pies but made mine pie muffins, which were lovely with cream!
Ive made those choc crinkle biscuits before and they were lovely. I will be saving all the recipes here for next year!
