Make ahead Boxing Day buffet

We are hosting for Boxing Day and as we don’t have tons of fridge space or time I would like any ideas for things I can make ahead and freeze. For example going to make big chocolate cake which I can defrost and decorate on the day. Definitely doing gammon and sausage rolls, coleslaw, potatoes of some kind. Any ideas for savoury things that can be frozen? Homemade not bought please.

Does it need to be a buffet? I'd so a stew or curry or something that be easily re heated with sides. Pop the curry/stew in the slow cooker to keep hot x

@mumtotwo11 I agree that would be much easier but there are a few fussy guests (adults not kids!!) who don’t like food in sauce… seriously. So I figured buffet better. I love cooking and baking so want to spend a happy day making stuff ahead. Those two options look fab @Forgottenmyphone ! Thanks x

In that case - I have these saved to make for my lot for picky bits on Xmas night/NYE - Ive not tried them, but I have gluten free family members and the party food you buy isn't always geared up for them so will make them GFx

Jist looked at all these recipes more closely and they’re perfect! I think all this along with gammon, potatoes, baguettes, cheese and charcuterie etc will be perfect!

Individual red onion tarts go down well with vegetarians and non vegetarians.
this is not a proper recipe- maybe you could find one online Delia?, but here is what I do-
make small tartlet cases and blind bake
chop (ideally small) red onions in quarters keeping a bit of root on so they hold together, saute in butter until softened slightly
add tablespoon of balsamic vinegar, and level tablespoon sugar to caramelize.
put in cases- heat for 10 mins before serving

For your cheese have you considered a couple of baked Camemberts?

These are quite nice but need parmesan and more seasoning added than in the recipe

some nice fruit would be a pleasant change after heavy food at Christmas- mangoes, pineapple, grapes etc

don't forget your homemade chutney and piccalilli

maybe a bit of spice- onion bhajis, pakoras or satay

Instead of the sausage rolls could you do a sausage plait with puff pastry which would look good and freeze easily and maybe a vegetarian one as well?
