Hi,

Apologies I will pop this in the cooking topic too!
But I'm hoping for a tried, tested and adored fudge recipe please.

It's for a Christmas gift for my grandparents who have virtually everything already so hoping this might be a good shout (and a bonus it's homemade)

So hoping for a tried and tested fudge recipe, and bonus point for a Baileys fudge recipe please?

Thank you ever so much! ❤️🎄

Watching with interest. We have a friend who makes the best fudge I've ever tasted. He was entrusted with the recipe by his mother on condition that he never discloses it so I can't help here, unfortunately. Hoping for a near equivalent recipe!

Disappointing response here on the best thread started in a while

Ooh following. I prefer a creamy smooth texture rather than the sugary grainy types.

DilemmaDelilah · 01/10/2024 19:34

Oh I like the sugary grainy fudge, so a recipe for that kind would be great! I love coffee and walnut, but it's really difficult to buy nowadays.

Not exactly fudge but easy to make and looks 'festive':

This is in American measurements but it is a good recipe and easy:

Bailey's Irish Cream Fudge
Prep Time 5minutes mins
Cook Time 5minutes mins
Time to Set 4hours hrs
Total Time 4hours hrs 10minutes mins
Servings: 36 Pieces

Ingredients
24 ounces semi-sweet chocolate chips two (12 ounce) bags or 4 cups
14 ounces sweetened condensed milk 1 can
⅔ cup Bailey's Irish Cream Liqueur
1 teaspoon pure vanilla extract
Instructions
Line an 8x8-inch or 9x9-inch baking dish with parchment paper. Set aside.

Combine the chocolate chips, sweetened condensed milk, and Irish cream liqueur in a large saucepan, and heat over low heat. Stir constantly making sure to reach the bottom of the pan to ensure no chocolate chips stick and burn.

Continue stirring for approximately 5 to 7 minutes or until the chocolate chips melt completely and all the ingredients are well mixed. The mixture should be thick and have a glossy appearance.

Remove from heat, add the vanilla extract and continue to stir until combined.
1 teaspoon pure vanilla extract

Pour the mixture into the prepared baking dish, and use a silicone spatula to smooth into an even layer. Transfer to the refrigerator to cool for at least 3 to 4 hours.
Cut into squares, and serve. Store any leftovers in the refrigerator for up to 5 days.

We had a peanut butter one from one of those fancy shops a few weeks backand that was nice, Im not majorly fond of fudge but I liked that

I also like it creamy and fudgy rather than grainy if I do eat it and in the cupboard we have some whisky and ginger fudge, the flavour is lovely but its really crumbly and grainy which I dont like

Im still going to get up and eat some now though as its reminded me its there

WetBandits · 01/10/2024 20:13

I’m a lazy bastard and make slow cooker fudge (can’t be arsed with standing over a pan and running the risk of burning and ruining it!)

I normally use these recipes (most of them use the same base ingredients) and tweak the extras and decorations to suit the recipient’s tastes. I usually make a batch for anyone I get for Secret Santa, and anyone else I know fudge would go down a treat with!

Me too - I am here for the crumbly, granular type!

I use the one on the carnation website comes with video and always turns out beautifully. The secret hand me down recipe that can't be shared so reminds me of the episode of friends with phoebe and the cookie recipe from her grandmother. Nestle toulouse 😄

Oh my god, what have you done!

I dont even like fudge and I want to have these

So for those that make fudge, why are some recipes involving sugar and butter melted together, but those recipes in that link just use chocolate and condensed milk?

soupfiend · 01/10/2024 20:59

Ok, more slow cooker fudge questions, some recipes say put it on high and cook quickly, no stirring and others say put it on low with stirring every 10 mins.

I like a creamy soft fudge, so what is the best method for that?

For creamy and soft fudge, I tend to go low and slow.

Sorry if I’ve turned you into a fudge convert Grin
