If I par boil the potatoes and rough them up, can I then put in the fridge without them going off/getting discoloured?

what else do you prep in advance and how?

All the veg, I do not oar boil in advance I just cover in water.

The puddings, the brandy butter and mince pies and cake. The stuffing, bread sauce, gravy, parmesan parsnips and sausages are all in the freezer. The veg will get prepped on Xmas eve and sit in bags in the fridge overnight (potatoes in a bowl of water)

@KnowThyself , and anytone else who does this, do you do a salt or lemon bath or just water? And does this work for you with all veg? I've just prepped all the veg for tomorrow, just cutting up the raw veg not cooking them, and have put it in a bowl of saltwater on the counter. Will this be ok over night? Do I need to run out and get a lemon? Do i have to put the bowl in the garage to keep it cool?

Red cabbage, apricot stuffing for the goose. DH does the Christmas cooking.

Delia Smith’s red cabbage from her old green covered Christmas book: tastes better the next day for some reason. Can be heated in microwave/ slowly in a pan. Do half quantiles as the receipt makes a lot.

I’ve prepped the veg, and laid out on a roasting tin the vegetables to be roasted. The turkey is brining and herb butter for it ready to go. My vegetarian meal is prepped as well as the Yorkshire pudding batter, cauliflower cheese, bread sauce, and stock for gravy.

I’ll parboil the potatoes and parsnips tonight. Ive heard that drying out in the fridge overnight makes them crispier. Haven’t done it before, so hoping they won’t discolour.

That way tomorrow will just be about putting things in the oven and switching pans on.

I’ve made the Yorkshires, they’re cooked in the fridge ready to heat up tomorrow. I’ve chopped all the veg and have it in pans of water ready for tomorrow. Hoping it will
make tomorrow more relaxing!
