Leftovers: Tips for making the most of them

Hi, I'm looking to get some ingredients pre Christmas to make the most of my leftovers in the days following.

My top tips are:

Puff pastry - lay anything that goes well together on top and make a simple tart
Eggs for 'muffins' - whizz up leftovers that go well and mix with egg and bake. I freeze these.
pasta bake - I will have some ready made macaroni cheese sauce and then add things like shredded sprouts, leftover sausage/bacon, carrot....

I'm no chef though so please, please inspire me!

Don't overthink. Just chop everything up and fry, adding in any leftover bread sauce. And voila, Bubble and Squeak! Serve with any turkey or ham leftover. The best meal of Christmas 🎄 😋

The very end of our turkey (if it lasts long enough) makes Thai turkey curry. A turkey and ham pie comes first though.

I done a gammon joint alongside our turkey last year, and gammon/cheese/cranberry sauce toasties went down very well!

I live for Christmas leftovers. The leftover sandwich is obviously unbeatable, but I do other things too. The turkey carcass makes a pho, the legs a fruity curry, any leftover breast goes in a toastie or in a bahn mi style baguette. Leftover ham will make cheese and ham pasties, or a ham and pea risotto. Veg will go into a bubble and squeak for Boxing Day brunch. Leftover cheese if blue will make a broccoli cheese soup, or tart or on one occasion I made burgers stuffed with blue cheese and froze them. Softer lighter cheeses will make cheese sauce for cheese on toast some of which I'll eat and some of which I'll freeze in portions. It's a glorious week of leftovers eating from the 26th onwards here. Can't wait

Make an Asian style broth with stock, left over shredded turkey, pork or beef, add leftover green vegetables, or salad leaves, some noodles and Chinese five spice or chilli flakes etc. Very quick, light and tasty.

Use leftover turkey to make Pasta Alfredo, Turkey risotto or pilaff, Turkey and leek/mushroom/ham pie with white sauce or gravy. Or make a turkey hot pot with any leftover vegetables, gravy, sliced potatoes topping or dumplings.

Definitely bubble and squeak.. the boxing day toasted sandwich is also a fine thing. Leftovers plus cheese in the toastie machine. I also do soup to freeze.

Everything just goes in to make B&S.

My parents did this and I remember back in the 60's & 70's having wonderful B&S breakfast on Boxing day (and the next, and next....).
Nowadays we deliberately cook too much Christmas lunch just so we can enjoy B&S for several days afterwards. We even freeze some for later on.

Also do this after a normal Sunday lunch.

I make bubble & squeek, softly poached eggs on top, brunch

leftover meat with blue cheese and make a simple sauce to go with pasta

brie and cranberry jelly made into mini jam tart size tarts with shortcrust pastry for NYE nibbles
