National Trust red onion chutney of they do it this year. They didn;t last year!

Fancy - Fortnum's fig chutney is sublime with cheese.

Tesco finest chilli and tomato. A mild kick but keeps it interesting. Also SO good under cheese on toast.

I do not like chutney. Je n'aime pas....
But the exception is Tiptree Hot Gooseberry. NB It is not that hot. If on sale in supermarkets (Tesco, sometimes, I think), then at whatever time you look, you can expect most of the stacked pile to be gone and you will need to reach right to the back for the last couple.

Behindyouiam:: 8 red bell peppers. 8 red chillies (1grow hot cayenne,used 4 de seeded) including seeds. 400g tin tomatoes. 750g sugar. Finger sized piece of ginger or 2 heaped teaspoons of ground ginger. 6 cloves garlic, peeled and chopped. 250ml red wine vinegar. You are meant to put it all into a blender or liquidiser. I only have a tiny smoothie maker,and I like some "bits". Big saucepan,chuck ingredients in,bring to the boil. Simmer 50 minutes,if the mixture appears fairly sticky,cook another 10/15 minutes. (My jars will be sterilised and sitting in a pan of hot water. Now, I put half the mix in the smoothie maker, leaving the rest chunky. Allow to cook slightly,add to jars. Will make 3 large jars.

The onion marmalade, I use sturon , just because that's what we grow,you can use red,1kg 3 TVs olive oil. 150g light brown sugar. 150mls red wine vinegar. 125 MLS port or red wine. 2 tbs balsamic vinegar. Pinch salt and pepper.:: heat oil,add onions,low heat, gently cook 30 minutes. Add third of sugar, and cook further 15 minutes. Add the rest of the ingredients,simmer for 30/45 minutes, until liquid is absorbed and mixture is sticky. Put into sterilised jars .

2 Kgs Fruit Flesh (Mango, Apple, Pears with no stones or pips. Roughly chopped.
6 Medium Onions. Red or White finely chopped.
200g dried fruit. Cranberries or Raisins, chopped.
2 Tablespoons grated fresh ginger
2 Tablespoons mustard seeds, black or white
2 Tablespoons ground cumin
2 Tablespoons papriks
2 Teaspoons chilli flakes
2/3 handfuls (depending how hot you want it) good size fresh chillis including seeds. Red or Green or both. I also leave a few chillis whole.
*Optional. If you like it extra hot, 2/3 Scotch Bonnet peppers. I often get asked for this version.
500 ml Red or White wine vinegar
1 kg light Muscovado Sugar.

  1. Put all of the ingredients except the Sugar into a large pan and stir well. Bring slowly to the boil then reduce the heat. Cover and simmer for 10 minutes until the fruit is tender.
  2. Stir in the sugar plus 2 teaspoons of salt and keep stirring until it the sugar has dissolved. Gently boil uncovered stirring occasionally to prevent it sticking to the bottom of the pan until it is thick and pulpy, probably about 45-60 minutes. It will thicken as it cools, so don't cook for too long. If it's too runny when it has cooled you can boil it some more.
  3. Pot into sterilized jars and leave for at least 2 weeks before eating. It will keep for at least 12 months if stored in a cool, dark place.

You can change the colour by using a different wine vinegar, white sugar instead of muscovado, and the type of fruit - Artistic license.

Agree entirely on the quince paste - so amazing. Makes up about 20% of my diet in December.
