Hi please could you all educate me on cheese. Seriously ive only ever eaten mild grated cheese, mozzarella and edam and wensleydale. So I'm looking to create a cheese board this christmas. I like mild cheeses ( I think lol) not that I've tried many lol I no I dont like wensleydale if that helps also help with chutneys and wine that would compliment these and anything else you put with a cheeseboard because I honestly have no idea what I'm doing lol.

Carrs Water biscuits are my favourite - that is my recommendation. They don't overpower any cheese . Some people like some nice bread or just the cheese on its own.

Spot on! Carrs are perfect. They let the cheese do the talking.

My board would be

  • A good, mature blue Stilton
  • Wookey Hole Cheddar
  • Epoisses (Stinks, but delicious)
  • Yarg - Semi hard cornish cheese wrapped in edible stinging nettles.
  • St. Endelion Brie
  • Moody's Rosary Ash Goats cheese

All English, except the Epoisses.

Along with the Carrs, I'd probably go with a few sticks of celery, and that's it!

Thank you everyone for your advice and recommendations I certainly dont feel so overwhelmed with where to start now. Can anyone recommend a nice port to go with the cheese? I'm not really a fan of red wine it all tastes of vinegar to me lol maybe I've been buying the wrong stuff so feel free to recommend a wine aswell. I do love ports tho. I'm determined to treat myself this year as I never do and to try something new....you never know you all maybe have converted me 🤣

You might like Mavrodaphne of Patras which is a sweet red dessert wine from Greece, a little like port but not as heavy. Pineau des Charantes is another fortified French wine that's delicious with cheese.

Personally I'm a big fan of white port, great on its own this time of year or with tonic water in the summer.

Oh, and lots of Red Wine, Cab Sav, Chateuneuf du Pape etc.

If you go to a farm shop or even a specialist cheese shop they'll usually let you try tasters before you buy. If you only like mild cheese then you're probably not going to like Stilton but might enjoy brie or camembert.

Or why not go the whole English hog and swap the Epoisses out and replace with Stinking Bishop..?! 😀

So, mild flavour: Brie, port salut, Saint Paulin.
If you like truffle (tastes like strong mushroom) then a truffle cheddar would be good, or if you like smoked flavour then applewood smoked cheddar. Both stronger flavours, but not necessarily stronger cheese iyswim.
fig chutney, onion chutney and quince jelly are all good, possibly some chilli jam if you like spicy.

I've never been fond of cheese but am now known to provide delicious house. The secret is to find a decent cheesemonger/deli, put yourself in their hands and take it from there

Be absolutely clear it's for friends rather than yourself otherwise you will end up with a 'mild' rather than 'exciting' selection.

Separately, add some supermarket roule for yourself, sit back and enjoy the compliments

I love cheese, and it doesn't have to be too mild, but I can't stand runny cheese (brie, camembert etc.), blue cheese or goats cheese. If it is just for you then I don't recommend buying those, try them if you can go to a cheese shop or delicatessen that will let you have a taste. I would definitely get a Swiss cheese type, like Jarlsberg (yes I know it's not Swiss), Emmenthal, Maasdam. Gruyere might be a bit strong for you but try a bit if you get the opportunity.
I particularly like cheddar with caramelized onion if you can get that. I can't be bothered with any of the cheeses with onion or chives that aren't caramelised, but I do like Wensleydale with apricots.
There is such a large variety of cheeses out there and the same type of cheese from a different maker can be very different. I highly recommend trying to find a cheese shop and trying a little taste of several different cheeses. The staff should be able to recommend some for you to try it you tell them what you like and don't like.
