Snowball pudding. My favourite from being young. Have also made with pineapple and Malibu, also in individual portions in a bun tin. Make ahead and keep in fridge a few days.

My own Sherry trifle recipe (well passed down from my mum).
•soak trifle fingers in Sherry overnight.
•add a bit more in the morning!
•add a layer of fresh mixed raspberries/blueberries
• add a layer of cold custard
•add layer of whipped double cream
• top with more raspberries/blueberries

@marmaladeandpeanutbutter No it doesn't, it has onion and bacon in it so it is a savoury stuffing, albeit with the spiced sweet note that the gingerbread loaf brings to it. It's great with Turkey and fabulous in leftover sandwiches. Now I make it as a second stuffing, I like to have a more traditional flavoured one as well.

I like this nut roast recipe.
I’m happy to eat dairy so I add an extra 2 finely sliced onions caramelized in butter with the leeks (quite a lot of butter 😂) and use full fat dairy milk rather than soya milk.
I’ve also done it with half the hazelnuts replaced with mixed, roasted, salted nuts and highly recommend doing this. Soaked and chopped porchini mushrooms also make a great addition, as does lemon zest and extra garlic.

I make extra of this if we have veggie guests coming because it often gets eaten by everyone as a second stuffing!

I make this as a spiced chocolate orange tart by adding the zest of an orange and replacing half the chocolate with Green and Blacks ‘Maya Gold’ (or some cinnamon, ginger and mixed spice if I can’t find it). Also, for anyone who makes fish pie on Christmas Eve then this recipe is the best I’ve had:
-2 packs of raw fish pie mix (about 600g of mixed salmon, cod and smoked haddock cut into cube)
-300g of raw (defrosted) prawns
-200ml full fat milk
-4 tablespoons crème fraiche (full fat)
-40g butter
-25g plain flour
-250g baby spinach
-3 tablespoons of capers (chopped)
-Lemon zest, lemon juice, salt, pepper
-Mashed potatoes for the top

Cook the fish in the milk until nearly fully cooked (adding the prawns for the last few minutes). Drain the milk and keep to one side.
Make a roux with the butter and flour. Then add the milk slowly to make a white sauce. Add the crème fraiche at the end of making the sauce. Add the capers. Season with lemon zest, lemon juice, salt and pepper (to taste).
Stir through the spinach and wait for it to wilt a bit.
Stir though the fish and prawns.
Put in an oven proof dish and top with mashed potato (or thinly sliced potatoes dotted with butter).
Bake until golden and delicious

I love Gordon Ramsey’s turkey gravy (you tube) is a bit of a faff but delicious. He’s a big advocate of resting the turkey and that takes all the urgency and rush out of Christmas cooking.

My game changer with Brussels sprouts is to cut them in half and caramelise them, cut side down, on the pan - I add garlic, lardons and a dash of soy but you can sub your own favours.

Oooh, good thread. Christmas is the only time of year I have any interest in cooking, so I appreciate tried and tested recipes.

Thanks for the nut roast recipe, @Monkeymonkeymoo. I was just saying on another thread that Christmas is the only time you can buy a good nut roast...for some reason it's never occurred to me that I could make one myself. It's a lot simpler than I thought (though now I type that, I'm not sure what I thought would be complicated?).

The snowball pud looks super nostalgic, @TherealmrsT. Shame I spend Christmas in a house full of dried-fruit haters as I quite fancy making it.
