Veggie main ideas without pastry!

I'm the only vegetarian and normally just have a Quorn roast on Xmas day, but fancy a change. As it's only me I don't want anything too fiddly, happy with pre-bought or a simple recipe. However, every recipe or product I find is either wrapped in pastry like a pie or wellington, or is a nut roast! My problems are that I can't stand a nut roast and don't want a heavy pastry based dish on Xmas day with all the veg and trimmings. (I need to leave room for pudding and nibbles!)
Does anyone have any suggestions? I like butternut squash, goats cheese type flavours.

I don't have a receipe but in my head I have an idea like a pastryless quiche thing, like the filling of the quiche bit

With onion/mushroom/red pepper/other vegetables

Not all at once maybe just your own mix

It’s not squash or goat cheese based, but Delia’s parsnip roulade is lovely. Maybe a bit more involved, but the meat eaters have enjoyed it as well, so it’s not effort for just one person. It also can be made in advance and simply heated through on the day.

DD is currently a huge fan of tescos plant based chicken kievs - you would need to like garlic though and probably wouldn't go with gravy...

M&S have a butternut and ricotta stack that looks good, but I haven’t tried it yet.
For a do it yourself one maybe roast and stuff half a squash. Something like this recipe… www.easypeasyfoodie.com/cranberry-feta-quinoa-stuffed-butternut-squash/

I was going to suggest the M&S ricotta stack, it's really nice. Might not really go with a big roast with lots of gravy but nice and festive and light enough to leave room for everything else. I know you said not nut roast but there's is really nice too.

I'm not a massive fan of gravy so only have a bit on my toasties! I reccomend Lidl's vegan gravy, very tasty and better than some bisto!

I like marigold vegan gravy ( and I'm a dedicated meat eater) -add a bit of mustard and it's better than bistro. My H thinks the same

I'd always just have either a curry on Christmas day, or... And this 20 years ago - Linda McCartney lasagne. All with roasted veggies etc

I like this Nut Roast. It comes a bit like stuffing. You mix it you with boiling water and bake it. I'm the only veggie, so I normally slice and freeze leftovers for future meals.

Except this year, we are going to the PiL and I'll get whatever the veggie main course recipe is in the Waitrose magazine, regardless of whether it contains goats cheese or pastry , or both, (we've been married 22 years, mil knows I'm not keen on these). My "inability" to eat meat will be mentioned approximately every 20 mins for 3 days. I will not voice my opinion on sleeping on the floor, because although my PiL are more than comfortably well off (2 civil service pensions), they refuse to buy spare beds of any sort since "no one ever comes to see us".

I saw Jamie Oliver making some lovely looking individual stuffed squashes the other day - the little ones. He put in some chopped veg and some of those mixed grains you get in a pouch at the supermarket, and then roasted the whole thing in the oven. They looked so good that I’m planning to make them after Christmas. I’ll bet there’s a recipe on line, but the joy of stuffing things is you can bung in pretty much anything you like.

Sounds utterly horrific! Will you be able to have a lovely treat once home to make up for all of that, as it sounds more like a penance than a holiday?
