Can anyone recommend a really good Christmas cake recipe please? We always make one but use a different recipe each year. Last year we did the Good Food make and mature one.

i do this but have simplified it over the years by not using all the different alcohols - use what i regularly have in the cupboard, and using a good dried fruit mixture instead of all the different fruits listed. As the fruit is all pre-soaked there is no need to feed the cake after baking so i make it early december.

This one is super easy. I make it with dark rum instead of brandy.

Delia Smith, by the book. I made it last weekend and will feed it every Sunday.

Another vote for Delia's Creole Cake

Waitwhat23 · 06/09/2022 18:49

Delia's Classic Christmas Cake, fed with cherry brandy. I made mine a couple of weeks ago and will feed until early December.

Another vote for Saint Delia.

I’ve always been put off by all the different boozes in the creole cake.

I think I'll go with this one too. I usually buy the pre-soaked fruit from Aldi or Lidl. Does anyone know when it first appears in the shops? I'd love to get it done sooner this year.

I always make Mary Berry’s cake:

Last year I also made Andie Oliver’s spiced rum cake and although not so traditional it was lovely and still Christmassy. Will be doing it again this year as it was very popular!

Mary Berry with the apricots. Always a winner.

I know you didn’t ask, but it might be useful to someone: Vegan Christmas Cake

I’ve made this a couple of years running and it’s been very well received by non vegans too

Jane Asher's Last Minute Christmas cake - always reliable! And you can make it as late as you like, or months beforehand and feed it. It's delicious either way!

ConstantlyCooking · 06/09/2022 19:14

I like the BBC Good Food simmer and stir cake. It's partially cooked when it goes into the oven so bakes quickly plus the simmering makes the fruit nice and plump.

Mine is from the 1975 Good Housekeeping book - it has a very useful chart giving amounts for different size and shapes of tins. It’s basically a rich fruitcake recipe with ginger and mixed spice fed with brandy. I start mine in October half term ( even though I’m now a retired teacher!)
I mix the dried fruit, spices and brandy and leave to soak for a week
Bake the cakes
When cool turn upside down and makes holes with skewer, feed with brandy and wrap up well
Feed once a week for a month
Marzipan, ice and put on the vintage decorations!

ItsnotaHenryMoore · 06/09/2022 19:29

I love this Bees Bakery cake. Not as heavy as some.

I use the Delia Smith recipe as a starting point but sultanas and cherries , not raisins or currants , grated orange/lemon rather than mixed peel , no spices , caster sugar not brown. Amarretto to soak and mixed nuts -brazil, almonds, walnuts, macadamia

Delia recipe almond paste (delicious and so much nicer than bought ) , royal icing in a thin layer.

Snugglemonkey · 06/09/2022 20:26

I do Nigella's cake and pudding from the Christmas book every year. I think dried fruit is vile and have never tasted them, but everyone loves them and I need to make more every year as people request them.

Longbarn5 · 06/09/2022 21:08

I have made Delia for years but made Good Housekeeping Port and orange Christmas cake last year. It one every vote in our household...

Waves at 70. I took your idea of using amaretto and can recommend it!

tillytoodles1 · 06/09/2022 21:19

Delia's cake is so delicious it's the only one I've ever made. I don't marzipan or ice it though, I don't like those bits.

FancyFelix · 06/09/2022 21:53

I made Nigel slater's for the first time last year and it was gorgeous. So much lighter than others . Normally do Nigella or delia but I think I'll do the nigel slater one again this year
