HEEEEEELP - first time cooking xmas dinner and turkey question

Right - am cooking xmas dinner tom (only for 6 so gentle introduction)

I have a boneless turkey brest joint - I have taken off the string bit (not sure if I was supposed to but have now so too late if I wasn't) and covered it in streaky bacon.

Do I wrap the foil all the way around the joint and then put it in the baking tray?

Do I put the joint in the baking tray and put foil over the top only?

Do I keep the whole thing in the fridge overnight or on my kitchen counter?

I would keep it in the fridge.
I would put the foil on top, not all the way around, so you can whip it off for the last 15 mins and get the top all golden and crispy.

one other question - what would the potatoes and parsnips roast best in? Haven't got goosfat....

Ahh... I always roast mine in olive oil, but I'm a veggi so I don't want them all covered in bird juice.
Think meat eaters might roast them around the bird, but you'd have to get that confirmed by someone else.

Plunge the potatos and parsnips in boiling water in a saucpan for 10 mins and then drain away the water and shake the potatoes to ruff up the outside of the potato - then put the potatos into the hot oil (which is in a roasting tin on the gas or electric ring) and put the potatos in the oven to roast - they will come out nice and crispy.
