How to make my Christmas dinner a little less blah?

I know you are probably all busy stuffing your turkeys and making chocolate truffles , but I'm just looking for tips on how to make my Christmas dinner a bit less blah and greasy and a bit more grown up.

I have some fresh thyme/rosemary and sage, and various spices, and the usual suspects, potatoes, carrots, parsnips, greens, stuffing and a turkey crown. Any tips?

honestly I think christmas dinner should be just a big ol' roast with lots of gravy and freshly cooked plain vegetables

and then go mad on the puds

not sure what you are after but here's some ideas. For the roasties, les oil. Then they are more crispy. If you sprinkle them with salt and use maris piper they get those lovely crispy bits. Parsnips - I boil for 5 mins first then drizzle olive oil onto them, again, less oil.
Never cooked meat so can't help there.
Might be worth looking up some web sites. I'm sure Nigella or Jamie Oliver have some cooking tips.

it is less blah because you get slowly pissed whilst cooking it.

make a selection of herb butters with the herbs you have. then use a different one on each of the veg.
rosemary infused carrots
sage with brussel sprouts
thyme roasted parsnips
start making fantabulous gravy today.
in the overn roast the giblets with carots onion and garlic and some of the rosemary and a bit of butter
blast in the oven until almost burnt.
take it out and mash the wole lot with the spud masher. add a tblesp of four and chicken stock
add a dollop of cranverry sauce
push thru a seive and season.
keep in fridge til tomorrow

cremola is that a better way then making stock from the giblets??

i am not doing the full turkey , but stuffing turkey breasts. dh brought me 6 chicken wings which i roasted instead of giblets with the carrot garlic and onion. the gravy is delish, but i used really good quality bought chicken stock. works fine

Oh I see, I will make the od giblet stock, just about to put it n. Ham is bubbleing away nicely in it's ginger ale (according to Nigella!!)

so is mine crunchie! have done a whole ham too as well as the stuffed turkey breasts.had touse marmalade as couldn't get the ginger jam or whatever it was Nige used.
