Anyone care to share a good recipe? I've never made them but am making roast beef on xmas eve and would like to give it a shot. thanks!

I love the James Martin recipe. I make them in a muffin tin (just fill every other) and they turn out massive and crispy!

goose fat
24oz plain flour
Pinch of salt
3 eggs
1.5 pints milk

Makes about 30 small fish or 24 large

Equal amounts of plain flour, eggs and full fat milk. I put mine into a mug . Then beat together and chill the batter.

Add mix to 1cm of sizzling hot veg oil in the trays.

Take about 20 mins.

Here's my best chef tip too. Make them the day before or any time before and put straight out of the oven into freezer. After half an hour you can put them all into q bag or a tub.

Cook from freezer to oven in 5 mins on the day.

I heat fat in the tray really hot (220c) for 15 minutes. For the batter I use a cup measure and equal quantities of egg, flour and milk mixed until no lumps. Pinch of salt. Pour into the hot trays and cook for 15 minutes at 180c. I was given this recipe from a friend as mine never worked and this has never let me down

I use the following recipe and it's not let me down yet! This makes 6 but you can double for 12.

2 heaped serving spoons (the huge ones) of plain flour, add 2 eggs and roughly mix, add 3 serving spoons of milk, mix, 2 more serving spoons of milk, mix, 3 serving spoons of water and then whisk (by hand) until smooth.

Lump of lard in Yorkshire pudding trays, heated in oven at 200degrees C for 10 mins. Then put Yorkies in the oven for approx 20 mins. Don't open the oven while they're cooking.

Another person voting for the BBC one. I do a large one with this recipe and it is awesome. I think the right pan is important as well as hot oven and hot oil.

1/2 pt of milk,
3 eggs
Whisk together then add enough flour to make it the consistency of double cream. I have a particular spoon and I start with 3 spoons of flour.
Rest the batter for at least an hour.
Heat oil in a muffin tin, add batter (beat it again) into each hole and cook for 25m at 225C or until done,
They also do well cooked in advance, frozen and reheated.

150g plain flour
2 eggs
6 fl oz milk
4 fl oz water

Keep at room temperature for hour before using

25 mins on 200' (preheat oil in pudding tins first for 15 mins)

The mixture ratio isn't that important in my experience. It's more having hot fat, a hot oven, and leaving door shut until they're done !

Hot fat hot oven
For 12 in a muffin tin or one in a roasting tin (toad in the hole)
3 eggs beaten one at a time into 4oz of flour. Slowly add half a pint of milk. Salt and pepper. Mix with a hand mixer until smooth, bubbles round the edge of the bowl. Bake for half an hour or so, don't open the oven door .

Equal VOLUMES of plain flour, milk, and eggs, salt and pepper. Whisk, and ideally sit in fridge for a couple of hours. Hot oven, blisteringly hot beef dripping or oil in muffin or trad flat tins for a good 5-10 mins, pour in cold batter so that it sizzles.
Any leftover batter, make extras, or make French pancakes for breakfast.
Agree easy to cook ahead and freeze!
