There is bloody tons of it. 😱😱😱usually I am of the “let’s just do a roast dinner but with turkey and pigs in blankets,” persuasion, but this year I decided to buy a turkey breast and a ham. Thought I’d do ham in coke on Christmas Eve and then roast the turkey breast Christmas Day, serve with some ham, pigs in blankets etc.

Except I have vastly over-estimated the amount of meat, and now I have enough to feed the 3 of us for .. well, I’m not even sure.

So short of inviting another 50 people round for dinner, wtf am I going to do with it all?

There’s an amazing Higgidy Pie recipe for chicken and ham pot pie (and another for left over roast chicken pie). I’d use the turkey and ham to make some filling, grab some puff pastry and make a bunch of pies to freeze!

Failing that, it might make some nice stews which you could freeze and reheat later?

(Ps anyone looking for an amazing recipe book, the higgidy pie cookbook is my favourite of all time!)

Yes I'd just portion it out and freeze some of it before cooking. You don't have to cook it all for Christmas day, leave it for Jan when things are a bit tight and miserable.

I'm vegan now but before I would do the following delicious delia Smith's Christmas recipes: turkey en croute (amazing), turkey soup and the rest in sandwiches.

I have a freezer and previously 2 but they're usually full to the brim!

Boxing Day: ham/turkey sandwiches for lunch, turkey leek and ham pie for dinner
Day after: turkey wraps for lunch, turkey curry for dinner
Day after: pea and ham soup for lunch, turkey ham and veg chilli for dinner.

Sorry OP, this has given me the best laugh of several days. "Trolling about ham" sums up the state of lots of us this close to Christmas.

Not everyone has room in their freezer though.

You can can meat.
Throw the cooked meat in clean hot glass jars, put them lidded into a massive pan, cover them with boiling water and rolling boil for 3 hours. Don't let the water go down
Take them out, put them on a worktop/board for 24 hours. Listen fir pop but not move them until after 24 hours.
you'll be able to tell if they're all sealed.
Store on the shelves, eat when needed

We keep some for leftovers for a couple of days afterwards. The rest gets portioned out, sealed up in vacuum sealed bags, labeled, and frozen. Then just pull out a bit when you need a quick meal. Turkey is especially good for this. Turkey salad sandwiches, soup, enchiladas, chili, or casseroles.

we love our Christmas ham.
have it for dinner on 22nd or 23rd and then eat it for lunch and snacks for days.

But I have discovered that it is well worth slicing a load of it and freezing it. Then you eat up what is left in delicious sandwiches, before it goes off.

then in mid January you get out the slices from the freezer and revisit the delicious Christmas ham one more time.

My dad has a honey and mustard sauce that we use too, yum.

Alternatively we love pea and ham soup (which also freezes) and tastes amazing with real ham.
And a really good ham pie is ace, and not something you often get.

I have sufficient turkey for 25 - fifteen on Christmas Day and nine on Boxing Day. Thanks to positive PCR's and sensible precautions we are down to six on Christmas Day and four on Boxing Day. So my freezer will be full of cooked meat and we will have one turkey based meal every week until it is all gone!

Someone on our local FB group posted a couple of days ago that they're going to have a lot of left overs on Christmas Day because they over estimated and asked if there was anyone that would like a dinner who might not otherwise have one.
A girl who is living in her car at the moment commented and now they're playing her up a dinner on Saturday 🥰
A lovely way to share the excess!

Cambells asparagus condensed soup (if you can get it) makes a superb sauce for turkey as a pie , jacket potato or crepe filling.

Roast Turkey and ham with trimmings on day 1. Then:
Cold Meat, pickles and bubble and squeak or chips.
Turkey and ham pie
Turkey curry
Christmas pie (include leftover roast potatoes, roast veg veg, gravy, pigs in blankets with some of the meat)
Turkey, stuffing balls and cranberry makes a lovely pizza topping
Turkey and pesto pasta
Sandwiches
If you have any bits leftover after that you can boil the rib cage for soup and use any scrappy bits of meat in a stir fry.

The Campbells condensed soups can often be adapted to make lovely sauces, many years ago I had a cookery book they produced using their products.
