Quick boxing day tea

Hi all,

There are three of us for boxing day tea. We won't have all the traditional leftovers (Christmas day at my parents) and don't want to generate more as going away. We will be having gammon for lunch. Can anyone suggest anything light we could offer? Thank you.

If you're having gammon for lunch then you'll probably only going to want something quite light - soup? Salad?

So it’s not at all fancy but we have really nice pizzas in the freezer (ham and mascarpone etc) that I can bung in the oven, cut up and serve. We will have been out all day, it’s easy and quick!

Definitely something light. It's only a small joint so I don't think there will be enough for later (though a gammon and cranberry toasties sounds amazing and I'm noting down for our holiday Grin)

A pizza to bung in the oven would be ideal but one of us is gf and the choice is rubbish.

Spanish omelette, including any of the leftover gammon? Serve with nice salad bits, cheese and crackers if still hungry?

Or a soup - leek and potato? Minestrone? Sweetcorn chowder?

Nice breads or crackers (some gf ones aren't too bad?) with cheese or philadelphia or balsamic vinegar and olive oil dip; tuna mayonnaise or other topping of choice on jacket potato; jacket potato and soup; rice and curry, either veggie or chicken? Or even something like salmon and cream cheese, scrambled eggs, or egg and chips?

Are you driving to your holiday or flying? If driving what about just doing cheese, biscuits, bread, salad and other nice bits then taking the rest with you?

Cheese toasties with soup? If you can get decent GF bread of course... No waste at the end and you only make what you need

This is pretty much what our BD lunch will be this year. Usually I do gammon, peas and cauliflower cheese.
