Oh bollards - what can I do with 11 kilos of bananas????

My Christmas organic fruit and veg order has just arrived and I ordered some extra bananas for Christmas.

I thought I ordered an extra kilo - but my finger must have slipped - and so I now have 11 bags of bananas sitting in my kitchen!

A prize (bunch of bananas) for the person who comes up with the longest list of banana dishes

Well I reckon I can send the nanny off home with a couple of bags tonight and the cleaner with a couple of bags tomorrow - so that only leaves 7kilos to get through!

DO you think the DCs will have grown fetching yellow skins with the odd brown spot by the time we get to the end of them!

Someone did say a while ago you could freeze them for banana loaf thingys - or am I imagining it?

The easiest thing to do is just to throw them in the freezer skins and all. When you are ready to use them for baking, just defrost, snip off the tip with scissors and squeeze out like toothpaste!! If you want nice chunks for smoothies, slice and flash freeze and then package together. Just use what you need.. Simple!!

Suggestions of things to do with frozen bananas -

  1. We blend them in smoothies to act as a "shake thickener" to give non frozen dairy smoothies an ice cream like taste and consistency. No need for ice either!
  2. Thaw them overnight in the fridge and add to oatmeal. Stir in a few pecans, cinnamon to taste, dash nutmeg, brown sugar or honey to taste, half a med. unfrozen banana, and 1 cup water. Nuke on high 2 minutes. *
  3. Slightly mashing one and throwing it in pancake batter before or after you pour them on the griddle. The pancakes can be cooled (don't stack while cooling), flash frozen then put into freezer bags. Reheat by microwaving in a single layer for 1 min or until not frozen in the center . Then crisp up a bit in the toaster if desired.
4.Add bananas to a yogurtwith a bit of milk and honey to make frozen yogurt pops.

I make up smoothie mixes and freeze them in Chinese takeaway containers. They contain a variety of fruits, and always at least one banana. When it is time to use them, I whizz them up with some yoghurt and juice/soda - no need to add ice.

There are around 9 bananas in each bag - plus 6 in the normal fruit box - so 105 bananas in total. So if they last 10 days (some are thankfully on the green side) that is 10.5 bananas a day. Actually if I get rid of 4 bags to the cleaner and nanny that is 6 per day, which is easily doable between 4 of us!

MMmmmm - good ideas - DCs adore smoothies.

I might freeze half of them and do the smoothies as suggested by CORT.

There were 6 big boxes of fruit and veg in total - my god we are all going to be fit and healthy by the end of the Christmas break.
