So how far up the cavity does one shove stuffing?

Am planning on stuffing the goose for xmas day (mainly to save oven space) but having never stuffed a bird am not sure of protocol as it were?

I only stuff the neck end. Stuffing the cavity can hinder the cooking process (might need longer). Stick something else in the cavity.

Sorry that sounds impolite lol. I mean for a turkey you might put in half an onion or lemon or something. I've never done goose though.

I have stuffed neck and cavity before......

I think I must have just increased the cooking time and turned the bird over for the last hour so it didn't get too dry.

The cavity of a goose is huge so you would be better off just stuffing the neck cavity. If that isn't big enough what you can do is fill up the cavity with cut up lemons/oranges, onions, garlic and herbs and then you can make kind of a pocket with foil near the opening and put your stuffing in there. Does that make sense?

Oh, I was going to say "don't!" but I see you need oven space. If you really do want to stuff it, I agree with MrsG - stuff the neck and put an orange or lemon in the main cavity - puncture it a few times with a skewer first.

Remember if you DO stuff the cavity it will affect your cooking time.

I smear butter under the skin to increase the moisture in the bird as well (maybe not for goose given how fatty it is! just keep basting)
