Christmas Dinner cooking help

I have a larger number of guests to cook for on Christmas Day. I am used to cooking the turkey and then letting it rest whilst I then cook the roasties and veg for the rest of the meal. We have decided this year that it would be really nice to have turkey, beef and gammon as a choice for Christmas lunch with any leftovers for the evening and Boxing Day. Can anyone help with the logistics? I've cooked roast beef before and I'm presuming that I would be able to cook the turkey and beef in the oven at the same time and let them both rest while I prepeare the roasties and veg as usual. The gammon has me stumped though - I've never cooked it, my DFIL often eats it boiled - but I'm not sure if it could be cooked the day before and warmed through. Please help - I don't want to muck it all up!

I wouldn't do turkey and beef together since beef needs a lowish temperature to turn out really tender (I pre-sear, then roast at 150-160). That said, I've more experience with goose rather than turkey. (With goose I steam it for 30 min the day before which really cuts down on roasting time as well as sweats out some of the fat. A bit like the Beijing duck method).

@justasking111 That's exactly what I do! They're too old to cope with more than one day at ours - but I usually package them up some cold meats and other picky bits and send them home with a meal for Boxing Day so they can enjoy the leftovers too Smile

Can’t remember who said well if their all oldies than why do you have to cook more than one meat..

My response to that is because the OP said that their fav meat is Gammon and not everyone’s favourite meat will be gammon plus even though it states most of them are oldies in the family not all of them are.. smh so much ignorance on this site..

Leftovers why not if you don’t personally wanna eat them what do you do just throw them in the bin?? Well nothing wrong with eating leftovers as longs stored okay and give to homeless or someone who will eat them and appreciate them.

I cook a huge ham on Christmas Eve. We have slices for tea with chips and cold slices on the Christmas dinner. There’s still normally enough left for sandwiches too. Makes a change from turkey sandwiches

Cook the gammon the day before or in a slow cooker. If you have a 3 tier steamer, that's good for veg, also recommend doing mash/new potatoes to supplement toast ones as hard to do too many at once, beef cooks quickly, in fact I don't put small joints in the oven but I do eat it rather rare Grin
