So, I am doing the cheese board course in the evening for 8 people in the evening. After they've all spent the day in their own homes etc.

Can I ask what your favourites are?

Obviously cheese and I will add crackers, grapes and some onion marmalade but what else? I'll also serve port.

For a bit of fun, if you want to be fancy, you could do a butter board too. James Martin did one on this morning, all different types of good quality butter from different areas (but then I am a pig who loves butter as much as cheese!).

Some fruit cheeses – a quince one and maybe damson or plum?

And personally I love cornichons. And how about, are they called banderillas? A stick with an olive, gherkin, chunk of pepper, cocktail onion and a mildish chilli pepper.

You forgot the anchovy!

I didn't think they had anchovy? I mean, if I were making my own they might – I adore anchovies –but I thought generally not?

I love this thread! Making my mouth water and I’m definitely stealing the butter board idea!

A pesto dip would also be nice.. or feta and pesto dip.

Yes the recipes do but not the jarred ones because the anchovy would male everything in there taste like anchovy otherwise!

Slightly off topic, but I've only had baked Camembert once, and it smelled like ammonia to me Sad.

I do have a ridiculously sensitive nose though, but it's really put me off. Does it smell like that to everyone? Maybe it's one of those smelly things (like parmesan cheese, can't bear the smell of that either) that people just like anyway.

@SandysMam it doesn’t surprise me in the least that James Martin has made a butter board. He is obsessed with the stuff! I do really like him and his food always looks so good.

I think a good variety of cracker and then lots of fruits to help break things up are essential. Fresh figs, celery, red and green grapes, conference pears would be my choice.

The best cheddar I’ve had is Black Bomber so get that if you can find it. Even better than the cheddar from Cheddar itself.

Oh, I love a good cheese board. This is what I do so that we can sit around for hours picking whilst we chat. I have an enormous slate roof tile that I use as a big cheese board. I write the name of the cheeses on with chalk. I also get out the cheese at least an hour before serving.

Cheddar - Snowdon Cheese Company Black Bomber, or Cathedral City Vintage. I have eaten my way through a gorge of Cheddar and these are my tastiest. Waitrose Cornish extra mature for a back up.

Orange cheese - Double Gloucester perhaps. I might skip this if I have all cheese lovers who eat all the cheeses.

Crumbly UK cheese - Lancashire or Wensleydale

Blue cheese - two of these, one like Stilton - Stickleton is a yummy alternative - and one creamy blue. Not so particular about that, Roquefort or Cashel Blue perhaps.

Rubber cheese - sorry, Dutch or Swiss :-) One with holes in or a really nice Gouda or some Emmental.

Goats cheese - A softish one, maybe rolled in ash. Alternative would be a flavoured cream cheese like Boursin.

A French type cheese, brie or camembert - unpasteurised for the win, if you can get them.

Novelty cheese - flavoured cheddar, Five Counties, Hunstman's, whatever you fancy. Avoid truffle flavoured cheeses, they stink IMHO and taint the rest of the board.

Slap all on a large board, each with its own sharp knife. Slice the first couple of slices of each to show which way they should be cut so no selfish person takes the very best bit from every wedge Angry

Two kinds of grapes, black and green, Sable and Candyfloss if I can get them. I have grape scissors, they are hilariously pretentious but people love using them.

Celery sticks sliced thinly, shoved into a glass of water, salt and pepper by the side.

Crackers - Water biscuits (Carr's), Cornish wafers, Jacob's multigrain, poppyseed.

Butter, soft and on its own plate with a knife.

Quince jelly, a sweet chutney, a pickle and a spicy chutney. Serve in little dishes with individual spoons or people faff with lids.

I might put out nuts and tangerines if it is Christmas time. Spray some nuts gold for a lovely effect.

Any cheese that is flavoured or that has bits of fruit in is strictly banned. Pure cheese only.
