What to serve with rib of beef?

Thanks to divorced parents I get the joy of hosting Christmas twice. This year though one of the meals is going to be on the 24th rather than after Christmas like usual.

I thought I would do a rib of beef but unsure what to serve with it. Would rather avoid roast potatoes and Yorkshire's etc as we'll be having them on Christmas Day.

I was thinking Boulangere potatoes and veg? This will be their Christmas dinner as such so I want to make it nice.

Surely the Yorkshires are served with the beef rather than a traditional Christmas lunch, unless you're doing beef both days?

I can do yorkshire's twice but the kids like them with any roast and will want them Christmas Day with the Turkey.

I just wanted to avoid two roast dinners in a row. I don't have to do beef but I want to do a nice meal as this will be their Xmas meal.

Definitely dauphinoise or celariac puree, you can have an xmas day dinner without yorkies but you can't have beef without yorkies!!!!!!!!!!! Lovely onion and red wine gravy.

I think I'd do fondant potatoes, so sort of roasted, but quite different to normal roast potatoes.

Then I'd do leeks and bacon in a cheese sauce. I probably would do Yorkshire puddings (they go with beef, they're an optional extra with turkey!) — you could always make double the mixture on Christmas Eve to save you time on Christmas Day.

Dauphinois definitely, some tender stem broccoli, braised leeks and peas, and yes to the yorkies - much more necessary with beef than turkey.

Not answering the question you asked but.... personally I would find two roast dinners in a row over-facing and would detract from the special roast that is Christmas Dinner.
I'd go for something like salmon en croute which is special but not a roast.

However, if you so go with beef....
Boulangere potatoes would be great, and then a couple of veg different to whatever you have planned on Christmas Day. Maybe broccoli, butternut squash and cauliflower? I'd also rather have Yorkshire pud with the beef than the turkey.

What about doing a big ham? You can have it hot and then you’ll have loads left over cold for Boxing Day etc.

Definitely have peppercorn sauce instead of gravy if you’re wanting to avoid to roast dinners. I’d go with green beans and Normandy potatoes.

Plus braised red cabbage, which can be prepared the day before.

Red cabbage , green veg and dauphinois , in fact a few Honey roast carrots would add to the colour on the plate
