So im attempting a christmas cake this weekend. Whats your tried and tested faithful recipes?
Also looking for some 'roll and slice' cookie recipes to make with dc. Plan on buying everything this weekend to have it all ready.

I think with Christmas cakes it’s hard to follow a recipe exactly, I’d go for any old basic tried and tested recipe you usually use and just add a bit more of what you like and less of what you don’t. I add way more sultanas and cherries and less nuts sometimes no nuts at all. Just go with your taste buds what tastes nice to others might not taste good to you.

Gah, I would love to make a good Christmas cake. I'm GF so tried a GF one a couple of years back but it went totally mouldy in the middle despite being 'fed' frequently with booze as in the recipe. Had to chuck it, despite all the costly ingredients that had gone in. Any idea why it went mouldy? (Sorry totally derailing of thread...)

@TiddleTaddleTat i think wrapping needs to be air tight to keep out mould. I hope thats all cos i dont fancy doing all that and then i cant eat it lol.

Delia's classic Christmas cake. Have made it for 20 years. I made a bit of a schoolgirl error when it said to add booze if your choice. I chose whisky as we had loads of bottles my hubby had been gifted and doesn't really like. Turned out it was a 15 year old malt! It turned out an amazing cake so I've made it with a malt every year since.

This year I'm trying a Jamaican black cake. It's similar to Delia's Creole cake but doesn't need icing which I hate doing, probably because a four year old could do a better job.

Delia’s classic Christmas cake has never failed me. Get your fruit into soak now, if you are making it over the weekend.
Also it takes longer to cook than stated in the recipe.

Delias always!! Soak fruit over night in booze and it is always good. I am always tempted to try another recipe but never do! Going to soak fruit today ready to make on Sunday ( I make 3!)

I made the Mary Berry classic Christmas cake today, on a friend's advice (someone who makes it every year and it's delicious). I followed the recipe to the letter, but it's overcooked. Recipe said 4hrs - 4.5 hrs in the oven - after 4 hrs it was definitely dark and crunchy looking.

I think I know where I went wrong though. My 9" cake tin is only 2.5" high. Looking at standard cake tins, mine must be extra small. Expensive error, but I'm determined to have another go and conquer this.

Any advice on how to make this 2nd time lucky?

I make these Lebkuchen every year, they work as slice and bake, but really you dont need to make and they will keep in the tin ( not in our house they dont!) for a week or more .

I often sub chopped dried apricots for the mixed peel . All my family love them -including the little ones- and I often have to make 2 or three batches

@TiddleTaddleTat I made this last year which is Delia’s creole cake adapted to gluten free with gf self-raising flour, ground almonds and xanthan gum.
It worked well and was delicious and kept long enough but we did eat it quite quickly!

This is my first year making a Christmas cake so I can't say how good the recipe is but I used the As You Like It recipe from BBC Good Food. I liked that it gave you the basic weights but you choose the mix of alcohol, dried fruit and nuts. Personally I added more nuts than the recipe stated and also loads of glace cherries because I love both. I also used a mix of different spirits in the hope of giving the cake a better flavour. It looked perfect when cooked and so far is smelling amazing when I take it out to feed it.

The original recipe says soak fruit for 3 days but I did some research and it seems as long as you soak overnight it should be fine.

My mother made an amazing Christmas cake but we have yet to track down the recipe. So I buy the snowflake one at Waitrose - really yummy and the closest I've found to it and no cooking!

Ah alas i shall have to wait to later in week now. Fil on deathbed currently so things gone bit tits up for now.
Might try and get out later this eve and pick up the fruit and alcohol tonat least get it soaking. Whats everyones booze of choice? I know an exs mum usedvto use tropical fruit and then malibu to soak.
