Festive Bundt cakes

I gave my husband a bundt tin for his birthday. So far we've made a rich chocolate cake and a carrot cake it in - both have been a great success. It would be nice to use it at Christmas time - has anyone got any recipes for Christmassy bundt cakes they would recommend?

How about this one: www.deliciousmagazine.co.uk/recipes/sticky-gingerbread-bundt-cake/

You can cook this in a bundt tin, I'd also add some mixed spice to it.

I’ve literally just been looking at Bundt tins. Which tin do you have? Do you recommend it?

The Nigellla vanilla cake is delicious when it's freshly baked but the next day it tastes like a flabby old pancake

RockingMyFiftiesNot · 08/10/2021 15:18

Watching with interest, particularly if someone has a tried and tested sticky toffee Bundt recipe, inspired by this but certainly wouldn't pay £20 for one!

TummyTurtle · 08/10/2021 17:22

@Minionbums in the end I got the £15 one from John Lewis. I couldn't face spending £50 on a Nordic ware one without knowing my husband would actually use it.

So far I'm impressed. We did grease it heavily with margarine - butter isn't recommended because of something to do with milk fats.

It's a perfect shape for a christmas wreath!
I'd be tempted to do a Christmas tiffin, with pretty fruit/nuts arranged on the bottom so when tipped out it looks like a chocolate wreath. (I know that's not quite what you asked but I love tiffin!)

I would put in leburkuchen biscuits, maybe some crystallised ginger for extra gingery-ness, orange zest, cranberries, vine fruits, dried morello cherries, maybe glace cherries, dried apricots, almonds, etc.

This is a great idea, I'm a big Tiffin lover!

@TummyTurtle might try this if no tried and tested links posted on here

MrsElf · 08/10/2021 22:02

Also hoping for some tested recipes! I have a mini Bundt tin set, which is bound to affect the cooking times Hmm
It’s SO PRETTY though!

haba · 13/10/2021 15:28

Ooh, we have that mini bundt tin too- best so far have been raspberry and marzipan (adapted from nigella's recipe for mini bundts in domestic goddess)

MMAMPWGHAP · 13/10/2021 15:35

Hi, I made this ginger cake last year, it was really good smittenkitchen.com/2008/12/gramercy-taverns-gingerbread/

The Jamie Oliver sticky toffee Bundt recipe worked well. I used twinnings breakfast tea instead of Earl grey and topped with sticky walnuts and dates to make it look more of a centrepiece with the remaining toffee sauce in a jug plus a jug of cream.

AlfonsoTheDinosaur · 13/10/2021 15:55

I would make a Sacher torte (put in half of the batter, add apricot preserves and top with the other half of the batter) and decorate it with a bitter chocolate glaze and holly leaves and berries.

Piccalino3 · 13/10/2021 15:56

After this thread I now seriously want to buy a £50 Nordic wear Bundt tin!!!

TummyTurtle · 14/10/2021 18:50

@haba ooh I have Nigella's domestic goddess book, I'll take a look.

Thanks @MMAMPWGHAP & @Jumpingintochristmas for those recommendations!

@AlfonsoTheDinosaur this sounds interesting! Off to look into sacher tortes...

HouseIsOnFire · 14/10/2021 19:17

Not strictly festive but this is the best bundt I've ever made:
www.ainsley-harriott.com/recipe/butter-rum-cake/
I'll just be topping it with some christmas decorations;)
