I shall cook turkey and all the trimmings for everyone else and probably just have the spuds and veggies. Will make sure that one of the veg dishes is something like leeks in white sauce or cauli cheese though.

So Carmenere, this quorn wellington, how do you do it? Do you defrost it then cut it in half and add the stuffing? What kind of pastry do you wrap it in?

Ok well bear with me because I don't have a recipe as I did just make it up but I have done it loads of times and it does work.

You can do it two ways; for lots of people a whole roast works well but for individuals you can use quorn fillets and make individual parcels iyswim.

Ingredients
Quorn - must be defrosted.
Pastry - puff works best but short works too, make it if you want.
Stuffing - I make a fruity one with dried apricots, onions, breadcrumbs, eggs and loads of herbs. You can use whatever stuffing you want but it needs to be moist.
Egg wash- a mixture of eggs and milk.

Method
If it is a whole roast, take it out of the plastic wrapp, cut a small slice off it lenghtways( to help it sit) and split it lenghtways down the centre.

Roll out your rectangular piece of pastry vertically in front of you. Place the base of the quorn (ie the bit with the flat end) in the centre of the top of the pastry.

Pile the stuffing on top of the quorn and compact it down a bit. Put the other piece of quorn on top of the stuffing.

Brush the edges of the pastry with the egg mix and fold the pastry over to cover the quorn.

Press the pastry together and press the edges with a fork to form a seal. Cut off the excess pastry. Cut one or two small slits on the top of the parcel and brush it all over with the rest of the egg wash.

Cook it at about 180C for about 45/60 minutes.

We used to always have lentil & cheese loaf (Sarah Brown recipe) with all the usual christmas dinner things. It can be a little bit dry though so it's nice to have something like cauli cheese on the side. Or if you're my mum... uncle bens sweet n sour sauce

these days I eat meat so I'll whatever DH is making but I still love the lentil loaf.

hoxtonchick · 28/10/2007 16:18

where can you get quorn roasts nowadays? our local tesco & sainsbos used to have them in the frozen section but either i'm being dim or they've disappeared.

CadaverousCorpulentCarmenere · 28/10/2007 16:23

I got one in Sainsburys the other day and iirc Asda have them too. I've used the fillets very sucessfully too, using two of them to a portion.

hoxtonchick · 28/10/2007 21:06

thanks carmenere, i will search more carefully next time (dp is vegi not me. if it were me i would have gone on a mission already ).

ChipButty · 28/10/2007 21:15

Hoxtonchick - I too have had trouble finding Quorn roasts lately. They are also fab for butties on Boxing Day with left over stuffing and cranberry sauce

PirateoftheScarybeing · 28/10/2007 21:16

When dh was here we used to wrap sausages (veggie) in that wierd bacon stuff, used to be ok.!!

ScottishMummy · 28/10/2007 21:24

home made vegetable soup

krabbiepatty · 28/10/2007 21:29

Slight deviation but anyone else not get on with
Quorn, ie find it er doesn't agree with you? I usually have something like aubergine parmigiana but am lone vegetarian in family...

hoxtonchick · 28/10/2007 21:30

i think quorn is evil kp, but thought this wasn't quite the thread to mention it on....

krabbiepatty · 28/10/2007 21:31

Quorn is officially Bad Stuff according to Food Guru Tim Lang (who is brusque when interviewed but I personally think a bit of a sex god as well as being Mr Food Guru ).

Have to say I found one of the big benefits of being vegetarian not having to deal with the conventional roastitude.

foofi · 28/10/2007 21:33

Usually we have a chestnut roast.

krabbiepatty · 28/10/2007 21:36

I think last year we had a lot of Italian antipasti of one sort and another but cannot quite remember. I'm glad you say that, mi, I always imagine Quorn continuing to grow in one's digestive tract, creeping, creeping...

motherinferior · 28/10/2007 21:38

fungally...

ScottishMummy · 28/10/2007 21:39

im not a fan of quorn - soylent green made in a factory
"quorn with factory packed extras"

"just as chewy as quorn"

Elasticwoman · 28/10/2007 21:46

What do veggie Mums do if there are carnivores attending Xmas Day? Does any one cook meat for others but eat veggie themselves?

Scottishmummy yum yum I like the sound of your Xmas din. One year I had enormous craving for nut roast on Boxing Day and I turned out to be pg with dd2.

krabbiepatty · 28/10/2007 21:49

I make DP cook the meat and then he messes it up and my mother comes in and fixes it in a manner which adds to the lovely stew of inter- and intra-family tension...

ScottishMummy · 28/10/2007 21:50
