What veg can I prepare today and how?

I have carrots, sprouts, parsnips and potatoes to prep.

I don’t have a huge amount of space in my fridge but was planning to:

Peel and chop carrots (bag up for tomorrow).

Peel and chop parsnips - do they need to be kept in water or will a bag be fine? Again in the fridge.

Peel, chop and par boil the roasties. Once they’re boiled, how do I store overnight? In the fridge in a bag okay or so I need to coat them in something?

I'd chop them and leave them in a saucepan with water. I'd par boil the potatoes tomorrow as they'll cook quicker if you put them in the oven hot x

Not sure about storing the potatoes once par boiled but .....

Greta tip for chopped / prepared veg is to put in a container with wet kitchen roll at the bottom and over the top to keep em fresh.

I'm going to roast my potatoes today, I did a trial run a couple of weeks ago. Roast them, put into kitchen roll them into the fridge when they're cool. Then tomorrow spread on a baking tray and about 15 minutes in the oven. I cook roasties regularly and I couldn't tell the difference. I also froze some as an experiment and had them later that week and they were just as good as well

The carrots will be fine. I'd just leave the potatoes cut up in a pan of salted water, and cook them tomorrow.

Parsnips I would never do early — DM told me they go black. I admit I've never tried it though, another MNer might tell us it's fine!

You could also take the outer leaves off your sprouts (and put a cross in the bottom if you do that), and pop them in a bag in the fridge.

I do them all this afternoon even parsnips. They haven’t gone black yet. I put in separate bowls of water overnight in the kitchen.

Are you cooking for a lot of people? I would leave the potatoes, carrots and parsnips til tomorrow as they take so little time to prep and just do the sprouts today.

The only veg I prep/cook before is braised red cabbage as it improves the longer it sits.

I do have teens who have to choose one veg to chop on the day though so that helps Wink
