Prepping potatoes on Christmas eve

Hi all, for those who prep some food items on Christmas eve, how do you store your potatoes once they're peeled and chopped?
I'm not sure whether to keep them in a pan with lid and water or to keep them in a zip lock bag.

A squeeze of lemon juice in the water keeps them white.

Pan of cold water. Never had a problem either!

According to the Times today, you can parboil, drain and shake and then put them in the fridge overnight to dry out. If I can find the fridge space, I will give it a try.

Am I the only one who doesn't peel roast potatoes? I just cut in half/quarters and leave skin on.

I did the parboil/roll in oil/freeze potatoes at Easter . Partly to try it out , partly because (as we were in Lockdown) the potatoes I had might not have waited that long.

Followed the recipe , but the boiling didn't give me the fluffy edges ( it did state no longer than x minutes ) . They were a bit rubbish so I'm just sticking with cooking on the day .

I have certainly gone back to doing them on the day after the heritage potato incident. It’s the only time DH has ever asked for help doing anything! 🤣
