My mince pies keep sticking to my tin

I've made two lots now, and dd1's made some today, & they've all stuck to the bloody tin!

They don't usually do this. Any suggestions I can try so the next lot don't stick?

Obvious question but are you greasing the tin?

Try and loosen them as they come out of the oven.

Try spraying the tins with that oil you use for low fat frying.
Is it the pastry or is the mincemeat seeping out and turning into glue?

Yep, we tried oil with today's that dd has made but they still stuck.

TrickyD it seems to be a bit of both.

They're still tasty so I guess it doesn't really matter 🤷‍♀️

I make frangipane-topped ones and with those, if you don't get them out of the tin while they're hot, any overspill topping will definitely stick. So if by chance that's what you're making, prise them (carefully!) out straightaway.

I now always make my mince pies in paper cup cake cases. Or failing that line the test with a bit of baking paper. I started doing that after that’s of stuck bottoms! Never fails.

Grease the tin really, really well, and then sieve flour on top, tipping off the excess- just enough will stick to the greased area.

Once out the oven, be ready with the cooling rack and a sharp knife and immediately remove mince pies from the tin whilst they are still bubbling. Once they start to cool even a little they set like cement to the tin!

If you have multiple tins, stagger the times so you are only removing one tin at a time from the oven.

Mine used to stick all the time and drive me mad- since I've done it this way I've never had a problem.. 🎄

I find chilling the dough for at least an hour helps and it doesn't stick to the tray.

This year I bought 2 circulon muffin tins at £20 each for mince pie making, which is a lot of money but I didn’t need any oil/butter at all and they didn’t stick even though I let them cool for longer than I normally would. I can heartily recommend them.

Chai, I think you've just solved my problem! I took today's pastry out of the fridge early on this morning, so I could jenga my shop, & didn't put it back. It'd been sat on the worktop over the oven all day.

I wonder if that's what I did with mine previously too maybe!

I use non-stick pans and thoroughly grease with stork from a hard block. Mine never stick.

I grease my tins really well and flour them, then get the pies out of the tins as soon as they’re out of the oven. I bought some non-stick tins from Dunelm a few years ago and they’re fab
