Recipie for soft gingerbread please.

Following on from my last post, tge children have decided they'd like to make gingerbread but it has to be soft/chewy rather than crunchy.
There are loads of recipes online but does anyone have a tried and tested one for soft gingerbread please?

This is mine, I like to add a tsp of mixed spice too, and chill in the fridge for a while after kneading. It may need an extra spoon or two of milk and you have to knead it for a little while to get it to all come together smoothly

We used this recipe a few days ago to make gingerbread men, Dd loved them and has eaten them all, the one I did manage to ear was soft and chewy but I didn’t cook them for too long, took them out when they started to colour.

This old recipe from an ancient cookbook fronted by a very young Mary Berry! - makes a lovely sticky soft cake-type, really nice. I usually make 1 1/2 times this to fit my bigger tin.

100 g margarine
150 g black treacle
50 g Golden syrup
50 g brown sugar
1/4 pint milk
2 eggs
200 g plain flour
1 round tsp mixed spice
1 level tsp bicarbonate of soda
2 level tsps ground ginger
(I usually add a bit more spices)
100 g sultanas (I never add those, prefer without)

Grease and line an 18 cm square tin. In a large pan warm together margarine, treacle, syrup and sugar. Add milk and allow to cool. Beat eggs and blend with cooled mixture.

Sift dry ingredients together into a bowl, add cooled mixture and fold in gently, mix well.
Turn into the tin and bake for 1 1/4 - 1 1/2,hours at 150 C, 130 fan. Turn out and cool on a wire tray.
