This year we have decided to try goose for a change. Committed now as I have placed my order.

I have never cooked or even eaten goose before. I have gathered some info such as having to prick it lightly and cook it on a rack because a lot of fat comes off. Some recipes talk about cutting off the legs to cut separately Confused

Has anyone experience with this bird and have an tips or recipes to pass on?

Have thought often about trying it and this year might be a good year to do so... seeing as I'm
not hosting the hoards.

Can you get crowns?

I don’t imagine you can get crowns. I don’t think it would be worth it either - you don’t get all that much meat on a goose to begin with.

Yes they’ll have them in the supermarkets - if not fresh then certainly frozen.

I love goose! But my family like it less so.

The times I've cooked it I've found the amount of fat varied. Sometimes I've only had to pour off the fat once during cooking. Sometimes a few times to avoid it basically stewing in fat. The first time I had it there was a tonne of fat inside the raw bird that I had to remove! Don't know if the butcher saw me coming.

It's lovely with gooseberry sauce.

I do duck now which is easier and cheaper but I miss the goose.
