Lactose free Christmas dessert

My mum always brings her trifle for Christmas, but she's recently gone lactose free due to a suspected intolerance, so I said I'd sort something out. I've had a quick look at some recipes, many seem to be aimed at vegans rather than specifically lactose free, and many have lots of unusual ingredients which I'd be reluctant to buy (and potentially have to chuck). I've seen some lactose free chocolate mousse recipes I could make, and a few very heavy looking chocolate tortes (which probably need cream to lighten slightly...). None of us will want anything too dense after Christmas dinner.

I'm sure someone on MN is in the same position, what will you be making? Or should I not even try and head to the shops??

I'm DF die to allergies. I've just bought a Christmas pud from Sainsbury's that doesn't have milk in. Free from ranges are usually ££££ but the cheaper puss don't tend to have milk in.

You could use a Lactofree or alpro custard.

Lidl's spiced Christmas biscuits and mince pies are also DF.

Last christmas we made a fruit meringue layer cake and swapped the cream for alpro custard. It was light and delicious after the main dinner

I made champagne jellies one year they were nice. foodnetwork.co.uk/recipes/champagne-jelly-flutes/ like this but leave off the cream

Oh god I love jellies. Gin and tonic jellies can be lovely too Smile

I'm making a cheesecake using vegan soft cheese (I've two lactose intolerant people and one CMPI person to cater for). I've not done it before, so I'm hoping it goes well!

I'd just check that they do actually like cheesecake. My allergy was so bad as a child that I've never really eaten dairy and I find that people are always trying to give me dairy alternatives in the misguided belief that I'm really missing it. Kind but I'd really that they'd just ask me what I'd actually like.

They're my children and mother in law. I think I know what they eat!

Some awesome ideas here, thank you all so much! Loving the meringue and custard idea! And champagne jelly sounds lush too. Thank you!

Pavlova with LF Cream instead of normal cream?

JiltedJohnsJulie · 04/12/2020 21:57

That's great. Hope you have a lovely day Smile

I use lactofree milk and lactofree cream on my puddings.
Butter is very low in lactose but it depends how strict she is right now. You could always swap for margerine or vegan butter.
But use whatever recipe you usually use

PickAChew · 04/12/2020 23:17

I'm lactose intolerant. Lactofree cream is about the consistency of whipping cream so perfect for a pavlova. I use some vegan ingredients, selectively. If you wNt to. Make a festive cheesecake, lactofree do a soft cheese and lactose free Greek yoghurts are easy to come by if it needs a tart dairy ingredient.

CoronaCurls · 04/12/2020 23:18

I'm a keen baker and use the Lactofree range to bake for a LF relative. It cooks well and handles like normal milk, cream and soft cheese. To make pastry with the spreadable butter, I freeze it first.

FindHungrySamurai · 04/12/2020 23:26

My preferred chocolate mousse recipe is just eggs and 40% chocolate, (melt chocolate, add egg yolks, stir in whipped egg whites). Perhaps serve with cherries in kirsch to make it more Christmassy (when in doubt I always add cherries in kirsch).
