Hit me with your Veggie Christmas ideas here please and thank you. Did the ubiquitous lentil loaf last year and I'm looking for something new!

I did a mushroom wellington when cooking Christmas dinner for my friends one year. Went down pretty well ☺️

happilybemused · 28/09/2020 06:42

Peas, carrot and broccoli. A few roast potatoes.

It is one meal in a year. Everyone else can fill their boots.

You can probably tell I really don't like a traditional Christmas meal 😂

I do this for my veggie/vegan family members and it is incredible. There’s quite a few elements, but it’s so worth it. A proper centre piece as well.

gordon ramsey. ..mushroom lasagne.....possibly my best ever xmas meal..I am not even vegetarian

MyShinyWhiteTeeth · 28/09/2020 07:19

I did a chestnut, cranberry, mushroom pie one year. It was supposed to be a wellington but I adjusted the recipe a bit. I did stars on the pastry.

I did a parsnip, stilton and cranberry nut loaf in a ring tin the next. I did roasted, seasoned sprouts in the centre.

I tend to dress up the vegetables more for vegetarian meals.

I think it's more about presentation and setting up the occasion as well.

The Mary Berry 5 nut roast is delicious.

Rosesandmint · 28/09/2020 07:23

I do this every year. I absolutely love it and so do the non-veggie family members

I've always thought this looked delicious though I've not tried it because dh is the only family member who eats cheese and he detests parsnips!

inappropriateraspberry · 28/09/2020 07:29

I'm the only veggie in the family and I often just have a quorn roast. Works well as cold cuts for boxing day etc. I also had a really nice filo butternut squash feta thing from Tesco the other year!

MunsteadWood · 28/09/2020 07:30

Also the Jamie Oliver cauliflower & broccoli cheese is yummy. I'd probably do this as a side. www.jamieoliver.com/recipes/vegetables-recipes/the-best-cauliflower-broccoli-cheese/

Here's the nut roast recipe www.goodtoknow.co.uk/recipes/mary-berry-s-nut-roast

Place marking for new ideas!

PurpleDaisies · 28/09/2020 07:31

I tend to buy veggie sausages and do extra stuffing.
Stuffed onions are surprisingly tasty.

LoveYouHoneybear · 28/09/2020 07:33

These all sound delicious! Thanks and keep 'em coming! x

Butternut squash and blue cheese wellington

Cranberry, chestnut and porcini risotto

Brie, cranberry and stuffing filo parcels

I don't like the fancier veggie stuff with Christmas dinner. Love a Linda McCartney pie or quorn roast - goes perfectly with bread sauce and roasties.

Have had this every year for the last 30 years.

It’s so popular with the non-veggies that I have to make 4 so they can take some home for the freezer!

Equimum · 28/09/2020 09:15

We always do a mushroom and chestnut Wellington. If nobody is vegan, we add blue cheese.

mam0918 · 28/09/2020 11:26

just xmas dinner without the meat... I have added pasta over the last few years which started when I had a craving but Toby cavery has started doing the same so it doesnt seem so odd anymore lol
