Who has made the bread sauce?

I have just made it, well am infusing the milk for a couple of hours.
i might struggle to find breadcrumbs, does it matter if they are brown or white?

No, white looks more appetising but brown tastes better IMO

Going to start it soon. I did the breadcrumbs yesterday - using white but I don't think it matters.

The first time I made it from scratch, all I had in was the most plastic white sliced, plus the last few slices of a milk roll Grin it still tasted AMAZING. It's my favourite.

I've tried making it from scratch, and have decided I prefer the packet version - and I call myself a foodie! Time to hand in the foodie card, I think :) Anyway, only DH and me for Christmas lunch, and he doesn't like bread sauce, so no reason not to go with what I prefer. Happy day!

My mum ripped up all the bread yesterday, left it out to go stale & then boiled chopped onion in the milk this morning & then put the bread in & then simmered it to thicken up & season. We always prefer the onion left in. We have two massive bowls of bread sauce & it will all be gone before bedtime, after dinner all the leftover pigs in blankets, stuffing, bacon from the top of the bird, cranberry & bread sauce will be left on a plate on the table for grazing on later.

We're making it with brown as it's what we happen to have. All made up, looking and smelling amazing. It's my DH's favourite bit so we have to have it even though the rest of the family aren't keen!

How do you make it then????

This is what I do -

Peel and halve an onion and stud it with cloves (use as many as you like depending on how clove-y you want it to be)
Cover with milk in a saucepan. Add a couple of peppercorns and bay leaves
Heat milk to just before boiling point
Leave to marinade for 1 to two hours
Take out onions and bayleaves, add breadcrumbs (to the consistency you prefer), reheat to just on boil
Put onion and bayleaves back in and leave to stand for another hour
Take out and discard onion, bayleaves and peppercorns
Add a slice of butter and a splash of double cream, reheat and it's ready.

I've never added mace, but it's one of those things where you can add what you like. Some people make it with cinnamon instead of cloves, for example.

I've never liked it because of the clove flavour (my mum has always made ours from scratch so I don't know how many she was using). However this year we bought a packet mix from a deli and you couldn't taste the cloves, just a gentle onion flavour and it was nice. So I might make it from scratch next year with just onion, bayleaf, a token clove and a bit of nutmeg would be nice I think, same flavour combination as bechamel sauce.

I made bread sauce, don’t need to make bread crumbs though just tear stale bread into chunks and throw them in the milk.

I find it quite straightforward to make on Christmas day because most of the time it's sitting round marinating, and it doesn't need precision of timing or ingredients - you can just fit it in around everything else. I made it from scratch for the first time about 20 years ago, and I've never gone back to the packet stuff - you just don't get the same creamy texture.
