Roasting Christmas eve

Is it ok to roast potatoes and parsnips on Christmas eve and then crisp up in oven on Christmas day?

I read a post during the week saying that the potatoes won't be as crunchy or nice if you roast the day before. Could you just parboil the potatoes Xmas Eve and have them oven ready?

I wouldn't cook the parsnips in advance tbh, I'd be afraid of them going soggy.

Why would you want / need to do this? There's plenty of time to roast them while the meat is resting.

Ewww god no!! Roasties just dont taste right left to go cold then re heated. Have to be fresh out of the oven

No they'll be horrible. I think you can parboil them before but I would just prep them ready to be cooked. They will be awful reheated from already being roasted.

I don't think they'll be as good. We peel our veg on xmas eve and chuck them in a pan of water where they are fine overnight. It's no effort to parboil then chuck in a roasting tin on the day.
