Gravy is really simple. Make up stock with stock cubes, heat over a medium heat. Scoop out 1/3 of a mug full and stir in a couple of tablespoons of cornflour. Pour it back in and stir constantly until it's thickened. You can repeat this step if it needs to be thicker. Stir in a few drops of gravy browning. Then on Christmas Day, reheat and add the meat juices. Tada!

Can't help with stuffing. I buy it.

Oh and use the relevant stock cubes to your meat. Beef for beef, chicken for turkey etc etc

I'm a bit of a cheat on gravy - I soften onions and then add the meat juices and some stock to Bisto onion gravy Blush

This stuffing is great and easy and freezes well - I cook mine separately rather than actually stuffing the turkey, so it’s now sitting in the freezer in an ovenproof dish, waiting for Xmas day

Paxo sage and onion stuffing. You can always add some fresh sausage meat

Thank you for the replies. I am loving the cheating ideas. I am not actually cooking the meat - guests are bringing it - so I won’t have the juices. We are having pork and beef. So do you think a beef gravy would ok to use?

Gravy - I’m crap, i’ll just wing it and hope for the best (Although i’ve found some recipes on here to try)

Stuffing - This is honestly amazing, I do it every year....

Sausage meat
Breadcrumbs
Crumbled chestnuts (Merchant is the brand)
Grated Bramley apple
Grated onion
Snip some sage in
Bind with an egg

I just make the quantities up as I go. It’s always been delicious. I prepped some tonight and have put it in the freezer, will take it out on Christmas Eve morning to defrost.

Stuffing 1
Sweat some onion and celery that is very finely chopped.
Cool. Then mix in with high quality pork sausage meat, 2 cups of bread crumbs, a bag of chopped Merchant Gourmet chestnuts, a teaspoon of mace, some grated nutmeg and a small bunch finely chopped parsley.

Stuffing two
Stale bread crumbs mixed with a sweated onion, celery, finely chopped apple, finely chopped sage, decent knob of butter, an egg,.

Gravy. Cook an onion in pan whilst meat is resting.Skim fat from roasting pan. Add a little cornflour and stir into residue in pan cooking for a minute or two on hot plate. I add a spoon of marmite but that’s optional. Add appropriate stock, made with vegetable water, a little at a time whisking away lumps. Add some gravy browning or Worcestershire sauce.

Add things dependent on meat - for pork add in some peeled apple or sage, for beef maybe horseradish. Whisk all up and simmer until thickened.
Strain if necessary and remove excess fat.
