I've seen threads where people have mentioned preparing the veg on Christmas Eve - can anyone tell me how this actually works? If you parboil your carrots and parsnips the night before and whack them in the fridge do they not go soggy when you roast them the next day?

I'd quite like to not have to spend time on Christmas day peeling/boiling/roasting but I always do because I worry the veg won't taste as nice if I do it ahead.

Hints and tips welcomed!

I peel potatoes carrots and parsnips on Christmas Eve and put them in a glass bowl of cold water until I need them. But I do that generally for a roast if I’m pressed for,time.

Par boil potatoes on Christmas Eve and toss in flour and leave to cool. Prep all veg and leave in cold water. Stuffings, red cabbage and gravy already made and in the freezer!!!

For the majority of veg, we will peel it on Christmas eve and leave it in water overnight to keep them okay. Cabbage we will just do on the morning as slicing that is quick.

For the potatoes, they will be peeled and parboiled on Christmas eve and left to steam dry in a colander until cold. When they are cold, they will go in a bowl clingfilmed in the fridge overnight. We might take them out a bit before they go into the oven, but potatoes we would cook from cold par-boiled anyway as it makes them extra crispy (just need a really hot pan to put them in).

I cook the roasties on Boxing Day and heat them up on the day. They are always much crispier than if you do them on the day. I prep all other veg and keep parsnips in water and everything else in an airtight container

We peel potatoes and keep them in water on Christmas Eve - they don’t crisp up enough if we parboil them early.
Carrots and parsnips we didn’t peel last year and just chopped then put in a sealed bag in the fridge - they came out lovely! They also don’t need parboiling.
Sprouts we prep Christmas Eve too, then boil and fry on the day.
