Nice vegetarian main course for Christmas day, please!

Does anyone have any suggestions, please?

Cannot contain nuts (one family member is allergic).

Ideally, we'd prefer something that is relatively easy to prepare and/or can be prepped in advance. (Busy kitchen & limited space!)

Any ideas?

There's loads of nice things in pastry in the freezer section of eg Aldi or Tesco.

The BBC vegetarian food magazine has nice ideas too.

I like the sides more than the main. Good roast potatoes etc.

AlexaShutUp · 12/12/2019 15:06

YY to good roast potatoes - my favourite part! Will check out the freezers in Aldi/Tesco. I did look in Sainsbury's but everything seemed to have cranberry in it, and I'm not really a fan!

Omit the cranberries if you don’t like them

I'm making an roasted red pepper, garlic mushroom aubergine roulade for my clients. It's very easy to adjust to vegan too by using vegan cream cheese in place of boursin.

I’ve made it already to try out before Christmas Day :)
Really easy to make and tasty

Saw this and thought I might give it ago too

DearTeddyRobinson · 12/12/2019 16:20

How about a baked risotto? There is a nice WW recipe for baked red pepper risotto which is lovely and really simple. Can make in advance and reheat if necessary. I can post it if you like

PestyMachtubernahme · 12/12/2019 16:25

Please give your vegetarians some protein and the same sides as everyone else.
I ofter serve marinaded tempeh, the slices look similar to meat.
I think I would cry if someone gave me risotto and roast potatoes.

Greenglassteacup · 12/12/2019 16:43

Seeds, grains, cheese, all good protein too

AliasGrape · 12/12/2019 16:46

We had these last year, I shoved a bit of sage in and a bit of my homemade cranberry sauce but obviously leave that if you’re not keen.

Make sure it goes with the veggie friendly sides, and have some veggie gravy. It's not the same having dry roast potatoes and a stuffed pepper.

I'd also go down the pre-prepared route, and will probably do the same myself tbh.

Mushroom Wellington, east to make.Cook the veg in the morning so they can cook.Total assembly time for ncludung egg wash is about 10 mins.

Root Vegetable Strudel

Roast a nice selection of chopped root vegetables the day before and leave to cool. Layer up several sheets of melted butter-brushed filo pastry, put veg in the centre and roll up, tucking the ends in. Brush the outside with more melted butter and then chill until the next day. Bake at 180°c for 45 minutes. Cranberry Sauce goes well with it

I sometimes add some crumbled cheese to the vegetable filling. Stilton would be nice and Christmassy, but feta works well too.

FLOrenze · 12/12/2019 18:22

Mine is vegetable puff.flaky pastry, rough chopped vegetables and fold over. Slash the stop and glaze with milk

Mintjulia · 12/12/2019 18:27

I made Raymond Blanc quenelles with veggie cheese, and sage, then baked in tomato & garlic sauce.

A bit fiddly but worked well.

hidinginthenightgarden · 12/12/2019 19:26

I’d go with a wellington so that it goes well with the side dishes.

LaurieSchafferIsAllBitterNow · 12/12/2019 19:35

I made this Stuffed Butternut Squash

you can leave out the nuts and it is DELICIOUS cold, the vegan was not here for Boxing Day and the carnivores were getting feisty about having a piece "just to see"
I put some vegan cheese in it...can't remember what but I must have bought it in tesco...in place of the nuts.

And it looks so lovely, not like a pie or wellington (which is basically just fancy pie)

Equimum · 12/12/2019 19:55

We tend to do a mushroom Wellington. If everyone can eat them, I add chestnuts, and if we’re not catering for vegans, I add blue cheese. It always goes down well, even with meat-eaters.
