I want to make a really nice choc biscuit cake this year in shape of a pudding, anyone got a really nice rich recipe for one. I don't like cherries in it, anything else is good.

Do you mean like rocky road? I’m not really sure what a chocolate biscuit cake is!

Nigella's is the one I use and it is always consumed with great pleasure. She has a Christmas version involving amaretti biscuits but I use Oreos or Lidl's equivalent, and also use two thirds dark chocolate to one third milk. If there is some white chocolate hanging about I sling that in. Mini marshmallows, smarties or similar and maltesers are popular here too.

This is how I make mine:

1 pack of digestive biscuits (400g)
1 pack of rich tea biscuits (300g)
1 large box of maltesers
1 bag of mini marshmallows if you want it to be rocky road
1 lb unsalted butter
300g golden syrup
5 x 200g bars of good chocolate. I use Aldi's choceur chocolate bars, 3 milk and 2 plain (it is a gorgeous chocolate, has no palm oil) Whatever you use, don't use cooking chocolate!

Break up the biscuits so they are in small pieces but not crumbs.
In a large pan, melt the butter and golden syrup together. Doesn't need to be too hot, just ensure the butter is melted. Remove from heat.
Separately, melt the chocolate (I use the microwave!)
Throw the bashed-up biscuits into the melted butter/syrup and mix well. Add the melted chocolate.

MIX MIX MIX (I usually rope DH in to help!!)
Add the maltesers and mix again
Add the marshmallows if you're doing a rocky road and mix again

Put the mixture into a container lined with a double layer of baking paper. Push well down into the container and into the sides & corners. Allow to cool and set in a fridge for at least an hour.

Bring to room temperature to slice.

Last year I made a batch of 6 as 'puddings'. I lined the bowls (used large cereal bowls) with a double layer of cling film and when set I rolled out white icing (I just bought the block) and then cut a 'splat' shape which I stuck onto the pudding dome (held down with a little warmed apricot jam brushed onto top of dome) and I put a sprig of fresh holly on top. I even bought cellophane and wrapped them. They looked lovely but were a complete faff to make! So this year I'm just giving blocks of the cake as that's all my family really care about - the actual cake!!

I use more or less the same method as LifeInA except that I melt the chocolate in the microwave and add the butter and syrup to it and mix well and micro on low. Then put in the biscuits maltesers etc. It means there is only one sticky messy bowl to wash.

No pudding shapes but squares piled up into a mountain and adorned with the little plastic reindeers as in Nigella's illustration , with some little rosemary 'trees' and dusting of icing sugar snow.

That's a really good idea @TrickyD unfortunately my microwave isn't big enough to fit the larger bowl in. Now I need to buy a new microwave!!
