Show stopping vegetable dishes anyone?

We are a vegetarian/omnivorous family. I am thinking for Christmas this year I would like some stand out vegetable dishes, rather than just a few to satellite the meat.

Perhaps a whole stuffed butternut squash, that sort of thing.

Would anyone like to share their favourite recipes?

This vegetable wellington is incredible. It’s a bit of work, but worth it at Xmas and you want something spectacular! I’ve made it a few times now and it goes down an absolute storm every time.

Veggie here too.

I once had in a restaurant a baked avocado with cranberries, stilton and something else as a crunchy topping. It was delicious.

But always red cabbage. I do mine in the slow cooker - add lots of raisins and apple.

In this month’s issue of Good Food magazine there is a butternut squash and blue cheese wellington recipe which I am going to try this year. I don’t have it to hand, but it might be on the bbc website.

I like the idea of a wellington. Also do red cabbage as it freezes so well and tastes better aged.

I'm not a huge fan of BNS myself and for me those sweeter dishes can clash with the traditional savoury sides that usually accompany the meat main. Something like this root vegetable tart or these individual pies would work well with roast potatoes, sprouts etc I think.

Of course I'll probably be doing a Quorn Wellington for the third year in a row if my dc have their way!

We're a vegetarian & vegan household & we have:

2 x Quorn Roasts
2 x Nut Roasts
yorkshire puddings
stuffing balls
roast potatoes
carrots
sprouts (peas for the dc)
cauliflower cheese (vegan)

We sometimes have individual mushroom wellingtons, but haven't decided yet.

Ottolenghi could be a good one here? Friends were raving about his fennel gratin. He also does a fab sweet potato gratin with sage, and roast aubergines with buttermilk sauce

@Ricekrispie22 we can always rely on you for the best ideas - I’m really looking for lovely veg dishes that are not just the supporting cast, but not a meat substitute either. Just a banquet of lovely food.

I do the mozzarella and roasted veg strudel from Delia Smith as a veggie main at Christmas (it is good, and also I can make it up on Christmas eve).

For good veggie sides we do parsnips in maple sauce, braised red cabbage and apple, and carrots with toasted coriander seeds and garlic.
