Can we have a Bubble and Squeak thread

Hi. As we always host it means that there is plenty of leftovers for bubble and squeak.
I don't usually have much success though and it's a bit disappointing.
Would you share your recipes please?

I don't really have a recipe as such. I just use whatever is left veg wise, mash it up fill the frying pan and fry off in butter. Stick a plate on top and hope for the best.
Brown and serve with cold meats and picalilli!

I chop up leftover roast potatoes, veg, stuffing and Yorkshire puds, put some oil in frying pan, add leftovers when hot, salt and pepper, and turn and mash it with a spatula until it is done, with crispy bits but not dried out.

It always tastes better with left over stuffing in it, and has to be fried for a long time so lots of crispy bits.
My mum fries an onion and adds the left overs to that for extra flavour.

I basically shove everything together, blitz it in the food processor, make patties. Freeze some and then fry them till they get a bit burnt. Fried egg on top and loads of HP. NOM

Omg I love bubble and squeak. We're eatinf at I laws andv they cook. Just the correct amount lol. But new year I'm doing a big roast so I'll cook plenty for that mmm

I've decided to make mine into more of a tortilla. I've mashed potatoes, parsnips, carrots and sprouts. I've added egg, mustard and cheese, put it in a cake tin, sprinkled on a bit more cheese on top and bunged it in the oven. Looks and smells awesome.

I don't add turkey. I sometimes try and bind it together with a beaten egg.

Chop and mash all the leftover vegetables then fry in a hot pan with a little oil li (heat oil first). Keep pressing down with a potato masher to get maximum contact with the pan. When the first side is crispy (we like it black) churn it all up, press it down again and leave until it's all crispy (and burnt). Meanwhile, fry eggs and serve on top of the bubble with loads of salt, black pepper and brown sauce se. Oh, and have white, buttered bread on the side Smile

Mmm. Today we had the goosefat roasted potatoes and stuffing with cutted up sprouts, carrots and roast parsnips, extra mushrooms and a bit of shredded spinach, with the half onions I roasted the beef on, all fried till crisp. Added a bit of Polish seasoning, Worcestershire sauce and fried eggs with plenty of black pepper. Better than Xmas dinner!

I fry up some crispy bacon, throw all the veg in and mash together. Fry in butter and serve with leftover turkey (sometimes Turkey in breadcrumbs)

Use the leftover goose fat to make it really decadent. Also - start off with some bacon and ab onion and make sure there's a good amount of potato to mash it all together.

DH did it for lunch - he used sprouts carrots parsnips and stuffing and a bit of goose fat. It was absolutely delicious. The posh stuffing made it - tasted quite chestnutty.

Well I cooked some bacon and then fried the mashed up veg in the bacon fat with a knob of butter.
Adding some of the stuffing definitely helped the texture but can't believe I forgot the fried eggs on top!
Good job I've got some leftovers in the freezer to do it all again 🙂.

Bread sauce makes it, perfect bind texture for the rest of the ingredients to stick to the pan for perfect crispyness

I made bubble and squeak tonight, just whizzed up the leftover carrots, sprouts, green beans and peas in the processor, squished together with the leftover mash, formed into small cake lets and fried in butter and oil. yummy!

I always fry up some bacon and red chilli first then add all the chopped leftover veg, parsnips and roasties. I'd say mine is more of a crushed veg affair as like it nice and chunky. Served with a fried egg and baked beans!

I simply chopped our ingredients up and moulded in to patty's, dusted in plain flour then sealed on a pan and popped in the oven to finish. It was leftover carrot and sweet mash, roasties, stuffing, Yorkshire pudding, pigs and blankets, sprouts with bacon and chestnuts all mashed up and left for a few hours before I cooked them. They were served with turkey gravy on top
