What can I do today to save time tomorrow?

I've tidied up and now thinking about peeling potatoes, carrots and parsnips in advance. Not done this before, but I think I read it's okay if they're left in cold water overnight?

Anything else I can do today to prep for tomorrow?

Yes prep veg as you said. Make pigs in blankets if your making them,

If you leave veg in water overnight and water becomes room temp do veg still taste ok roasted in the morning?

Yh id imagine it'll be fine, keeping in water as I know is to prevent discolouration (mainly potatoes) and just to keep fresh. Change water in morning to fresh if want

Depends what else you're cooking tomorrow?? Eg I have made stock today, made stuffings, crumbed bread for bread sauce, but does depend!

Late I know for today, but I was listening to Tom kerrudge and watched Jamie Oliver. They both said to prepare and cook loads the day before.
So I've done carrot and swede, mashed potato, red cabbage. Roast potatoes are half done. Carrots are peeled and chopped in batons and sat in salty cold water ( debated cooking those as well).

Boil the gammon ready to glaze and roast
Prep all veg
Make pigs in blankets and stuffing balls
Make trifle
Make stock for gravy
Set the table

Unless you’re using the table for breakfast I set the table for dinner tonight.

I premade the choc mousse desert along with raspberry coulis. So maybe deserts could be prepped?

Def prep the veg.
