How to stop a crown drying out?

So I’d prepared ahead and got a lovely relaxed plan for cooking Christmas dinner. DH said his FIL would get the turkey. Long conversation about getting a crown and I repeatedly and distinctly said I don’t want a crown as I hate them.
Three guesses what’s arrived this morning? Yep a boneless turkey crown.....

If you cook a turkey crown and it doesn’t end up dry and tasteless, how do you do it? (Although I’m not a fan of bacon in turkey either which seems to be the only answer I’ve found on google so perhaps I’ll just have too much mulled wine and think fuck it and lob it on the table all shrivelled up.... Grin)

Oh - and how long can you rest it for? Was going to rest my turkey for 90 mins while I leisurely cooked/reheated everything else, will a crown still stay ok that long?

Cook it upside down on a trivet of carrots and onion. Pour stock in bottom and cover in foil. End half hour uncover and turn over to brown. No bacon involved Smile

I do use bacon on top, I find it stays more moist if you make a little tent/teepee with the foil rather than just covering it, think it keeps the steamy moistness in better.

Butter under the skin, bacon over it. Place in a roasting tin on top of sliced onions, half an hour on high then add some chicken stock to the pan and cover the whole thing in foil so you get steam. When cooked remove from over and let it sit for half an hour.

FWIW- my tip for cooking a whole bird is to cook it upside down. Has never failed me yet Smile

I do a crown like the others on a trivet of carrots and onions and parsnip, but cover the bottom of the dish with cider and cover in foil, turn crown half way thru cooking, top up cider and take foil off for final 15 mins then rest under a clean tea towel still in a bit of cider, use cider and juices to make a gravy

OMG I have been so poorly with a bad tooth over the past few days that I thought you were referring to a dental crown. Blush

Cover it with foil and don’t cook it for very long.
