Need help with my cooking for Christmas, especially my roasted carrots and parsnips, they just turn out a bit meh. Is the missing ingredient honey? Anyone have any good recipes?
Also anyone making roast beef for Christmas dinner? Any good recipes for roast beef? What is the best way to make it, in the oven or a slow cooker?

Honey and butter make fabulous roast parsnips. Can't help is the beef though.

Were doing a few joints including beef. I've bought a brisket which I'll put in the slow cooker with red wine. I'll then reuse the wine in the gravy.
Simple, minimal effort and the longer it cooks the better

Depends what cut of beef it is? Rib or sirloin cook in the oven for around 15 mins a pound. Topside is around the same, but can be tough, especially if overcooked. I have never done beef in the slow cooker, so can't comment on that.

I add the honey and butter at the beginning to my part boiled parsnips. I make sure they are turned over/shaken every now and then. You can also do in a heavy based frying pan this way. I love roster parsnips.

I tend to throw in half a bottle if im using meat juice and wine for the gravy.
Sometimes I'll rub some pepper into the beef as well but I don't think anyone has ever noticed when I haven't! Just make sure the beef is a brisket joint if going in the slow cooker. Tis the only beef joint that should be well done as it's tough if under cooked. It's usually one of the cheapest cuts as well

It should say on the pack what cut it is. I think Tesco roasting joints are usually topside or silverside. I would do it for 15 mins a pound all the same, and baste frequently. When cooked cover with foil, keep warm and let it rest for at least 20/30 mins before carving.

I'm doing roast beef for mains on Christmas day, I'm cooking it in my instant pot, (cannot live without it) rubbing salt & pepper all over it, searing it first then cooking in the pot in beef stock & a bit of red wine for 40 mins, melt in the mouth beef & the gravy is amazing.

Honey and thyme on the parsnips and carrot. And a good shake of salt & pepper.

Beef low & slow and baste baste baste.

Thanks for the suggestions, ill try honey and mustard on the carrots and parsnips and test it this weekend before Christmas
