Easy or make ahead meals for Xmas eve and Boxing day

Hi! I find that I often get overwhelmed with all the cooking at Christmas (we host over both Christmas and new year) and I am determined that this year I will not be a martyr. I always do a lot of food prep on Christmas Eve so I can easily spend most of Xmas eve, Xmas and Boxing Day cooking as hosting always falls to us on those days. This year I want to do as little cooking for Xmas eve and Boxing Day as possible. I don’t mind cooking ahead and freezing stuff but I want to avoid lots of working cooking or washing up on the day but obviously the food also needs to be nice. To make it more challenging FIL does not eat….(drumroll please!) pasta, rice, gnocchi, noodles, chicken or anything spicy. I do have a slow cooker and and happy to use that. Any ideas? Thanks!

Mild chilli with jacket potatoes
Gammon in coke in th slow cooker with cauli,cheese and jps
Shepherds or fish pie
Steak and ale pie - freeze filling & use shop pastry, with wedges or chips

Baked salmon and veg.
Fajitas - just the meat and veg without any sauce isn't spicy.
Steak and kidney pudding.
Beef stew and dumplings.
Leftovers for Boxing Day.

Mary Berry's Beef Latimer (beef casserole with the tiniest bit of horseradish in it - NOT spicy). Always better made ahead (even frozen) Serve with jackets or mash and a single green veg.

Boxing Day - Buffet. Get out turkey/ham slices. Big pork pie. Boil some new potatoes and brocolli and make a warm potato salad (I found a recipe on a thread here, I can dig it out if you like Some tomato and basil salad. Everyone just helps themselves. You could add in some spicy chicken wings/pasta salad for those that do like it.

Agree with shepherds pie,turkey and ham pie, beef casserole, could you get away with quiche or frittata?

Cottage/Shepherds pie made in a large foil tray so that you can leave it out to defrost, once it's cooked there's no washing up either Xmas Wink potato hash is easy to make and is lovely with crusty bread and beetroot .

On Boxing Day I tend to do a small buffet - precooked ham use Nigellas Cherry Coke Ham recipe (with cherry jam glaze), selection of cheeses and chutneys, breads and crackers, a precooked quiche warmed up and salad.

I’m extremely lazy and thankfully surrounded by people happy to live on left overs almost indefinitely.

Christmas Eve: cook a huge ham and eat sandwiches with hot crusty bread and bowls of soup (made in advance and frozen)

The ham gets its second outing on Christmas Day alongside turkey, and all the trimmings.

Christmas tea is all the desserts that weren’t eaten at dinner, plus a tin or two of quality street.

Stephens Day is for turkey sandwiches, stuffing sandwiches, ham-cranberry and Brie toasties and anything else that doesn’t involve me stirring off the couch.

On the 27th I get creative with turkey and hoisin sauce, polish off the cheese board and turn any left over veg into soup to be eaten with more fresh crusty bread.

We can survive the 28th on slices of Christmas cake and cheddar cheese, and some scavenging of stray selection boxes.

I love Christmas food Smile
