I’ll start.. I’m no Delia. But damn I make a great Xmas pud. Ladies and gentlemen, I present to you my Grand marnier and Prosecco Christmas pudding. It is bloody amazing. Even people who don’t like Christmas pudding, love this preens

Christmas pudding
(Best made in October)

Place 125g raisins, 125g sultanas, 100g figs, the zest of 2 oranges and half a lemon in a bowl. Put in 3tbsp grand marnier and 175ml prosecco or champagne. Cover with cling film and leave out at room temp for 24 hours.
Then pour the mix in to a large mixing bowl. Add 75g self raising flour, 100g soft brown sugar, 50g vegetable suet, 1 tsp ground spice, 75g fresh breadcrumbs, 1tbsp marmalade, 1 apple coarsely grated, 1 carrot finely grated and 1 beaten egg.
Invite everyone whose present in the house to take a turn to mix the pudding (clockwise, whilst making a wish).
Put the mix into a greased pudding bowl.
Cover with baking paper and foil. Tie with string.
Steam for 6 hours... then store somewhere dark and dry until the 25th December.
Serve with a dusting of icing sugar and a sprig of holly

I make lovely mince pie pastry (with a bought jar of mincemeat Blush). If anyone wants the recipe, shout out and i'll look for it later after i have walked the dog.

Theliveroftea.. it will still be lovely if you make it within the next week or so. In fact, we made one and ate it that night and it was beautiful, just more of a cake texture than traditional Xmas pud Smile

I'm hosting on Christmas Eve and Christmas Day evening (and doing Christmas lunch but that's just for the four of us) and I'd love some fail safe, delicious recipes that ideally I can make in advance and store.
I've been lucky enough in the past to be able to afford to be lazy, go to M&S and load the trolley.
That's not the case this year and so I would be very grateful for your recipes as I'm really looking forward to making lots of delicious dishes myself.

If you have marzipan leftover from your cake (you'll need a fair bit) roll it into a sausage . Roll out puff pastry into a rectangle. Place marzipan sausage in middle an roll up (like a sausage roll), slice the top diagonally. Bake for 20 to 30 minutes at 180 can until golden.. Make glace icing and drizzle over the top.

I remember making this with my gran in the early 70s and it still goes down well

Ok, this recipe us for mince pie pastry, not the filling. It has ground almonds which makes it really light and crumbly, not thick and heavy so ut sits like a stone in your stomach.

Ingredients:
340g plain flour
225g cold butter, unsalted
85g ground almonds
100g golden caster sugar
2 egg yolks
1 tsp orange blossom water (i have never bothered!)
Beaten egg, or milk, to glaze
Icing sugar, to dust.

Method:
1: Sieve the flour into a mixing bowl with a linch of salt. Grate in the butter and rub it into the mixture until it resembles coarse breadcrumbs. Stir in the almonds and sugar.

2: Mix the egg yolks with orange blossom water (or don't!) and 1 1/2 tbsp of ice-cold water. Add enough to the mixture to bring it together into a firm, but not wet, dough when stirred with a knife.

3: Shape into a ball by hand, wrap in cling film and chill for 30 minutes.

I may have lost the last instructions! I'd imagine cook at about 150-180 for 15-20 minutes, keeping an eye on it.

I know this is MN heresy, but having read on another thread all about cinnamon rolls and was in Tesco, brooding on making some, freezing and cooking on Christmas morning but my eye was captured by a packet of Tesco's own cinnamon roll mix and my hand was uncontrollably drawn towards it. And it was only £2.

I made them yesterday, absolutely delicious! Quick and easy to make, very light and "Please can we have these again on Christmas morning, Granny?"
