Boxing Day lunch - can't decide, help!

Hi wise MNers, it is the usual turkey on the big day, but I can't decide what to cook on Boxing Day, please can I ask for your suggestions? In the past we've had roast pork or lamb, but I fancy doing something a bit different.

It will be for 4 adults - one is 90+ so only eats small portions, so nothing too rich or alcohol-fuelled Grin

Does anyone have any ideas please, thanks Smile

Salmon sounds good, I hadn't thought of that - we will probably have a surfeit of turkey curry in the days following, so I don't really want to do a curry on BD Grin

We will have ham for BD tea (in sandwiches probably) - I do mine in pineapple juice and glazed with mango chutney. What's the cola one like, is it nice?

Lunch and Dinner?!

We eat big meals so Christmas Day we just have a late lunch (main course only) but it's a huge meal and then we have dessert later on when watching a movie - might have a few nibbles too.

Boxing day is pretty much the same. I just have the dinner (mid afternoon) and maybe dessert later, Dh and boys usually don't bother with breakfast either but might have a bowl of soup,

One big 'dinner' Wax and probably just nibbles and whatnot for the other meal.

Actually, thinking about it, I'm now beginning to wonder about a full monty fry-up for breakfast... mmm Grin

Can't beat a full breakfast. :o Could have that then just a big bowl of soup and bread and butter at lunch and a lighter evening thing? maybe just nibbles/pate and melba toast/quiche/salad?

We tend to go down to two meals a day over Xmas (with lots of nibbles in between!) Will be having ham with the in laws.

Boxing day here tends to be leftover turkey and I slow cook a joint of beef.
Serve with crusty bread, pickles, nice crisps and bubble and squeak.
