Christmas 'supper' with lots of dietary requirements

We have Christmas dinner about 4pm, having had full English in the morning (that's not going to change, so please don't suggest that!) we usually then have cheese/pate & biscuits about 10ish, with mince pies. Christmas cake etc for anyone who wants more. One of our guests can't have gluten, dairy or chocolate. I know you can buy/make alternatives to the above (e.g. goats cheese & gluten free crackers, gluten feee mince pies etc) which address the dietary issues but am looking for some different ideas this year. Any suggestions please?

Could you do a Mediterranean type platter with cured meats/olives/salad/pate. Some dips and crudities served with GF bread and crackers? Then merangues with fresh fruit and cream for those that can have cream and maybe some fruit sauce for GF/Dairy free?

Or what about nice bowls of soup and you could do GF croutons and some toppings (chilii flakes/ground pepper/herbs)

A sort of afternoon tea type thing using suitable bread?

Or what about a pile of spicy potato/sweet potato wedges or potato skins with toppings or dips? Grilled pineapple with brown sugar served with some sort of dairy free topping?

Thank you, great ideas. Was thinking about the nibbles pre dinner but now thinking o could do soup as first course and then do the meats and dips for supper. This is why you need to ask Mumsnet! Thank you
