Christmas Day brunch ideas

Hi
This year we are thinking we will try having a Christmas Day brunch and the our roast later on in the day. I’m looking for ideas for delicious food to have for brunch, including vegetarian options for myself please. Never done one before. Thanks in advance.

We now do a full English about 11 (since the 'children' are now adults and usually nursing hangovers) then Christmas Dinner 4-5. Before that we've had things like scrambled egg with smoked salmon; or sausage rolls (Delia does a great vegetarian alternative); bagels with smoked salmon & cream cheese; croissants with a variety of fillings (add fillings then oven bake eg cheese; ham; mincemeat; marzipan etc)

I'd have :
Quorn sausages done in the oven, Quorn bacon lightly pan fried , eggy bread done after the bacon, potato scones quick fry then in the oven.

Huevos rancheros is nice for brunch. If you are making the base you can make some with chorizo, some without. You could do that the day before then just ladel it into your oven proof bowls, crack the eggs in and bake on Christmas morning. Shove some part baked baguette in the oven at the same time to dunk in the sauce, yum!

Poached or scrambled eggs, veggie and meat sausages (Linda macartney are good so is sausage mix if you can be bothered), a giant hash brown or potato Rosti, smoked salmon or Parma harm or crispy bacon, pancakes with syrup and strawberries with Nutella. Also, toasted English muffins, grilled tomatoes, garlic mushrooms, wilted spinach with lemon juice. Fresh croissants with butter and cheese/ cheese and ham. Red onion and cheese frittata or omelette (with ham or chorizo for meat eaters). Crusty rolls or toast if not English muffins. Oh, and lots of orange juice, Buck's Fizz, some nice smoothies and maybe some posh juice like beetroot and carrot or whatever if that's your thing. Bloody or virgin Marys are great too. Enjoy!

Jamie Oliver does a flatbread with egg, yoghurt and mango chutney in his 5 ingredients book...it sounds really weird but it’s amazing!

I'd do a kind of brunch buffet with oven baked French toast (can prep the day before), chopped fruit, bacon for meat eaters, gingerbread muffins. Maple syrup. Buck's Fizz. We often have a later Christmas meal and have some people over for breakfast, and this is my go to.

We have a late breakfast of smoked salmon and scrambled eggs . One year DH did a canapé table including things like tuna balls, stuffed smoked salmon parcels , stuffed eggs with savoury biscuits. We were still stuffed at dinner at half three
