I have certain recipes I make every Christmas. They are indulgent, special and Christmas wouldn’t be the same without them.

Do you want to share yours?

I don’t have much time at the minute but i’ll update later with my sage and chestnut stuffing, epic hot chocolate and Bailey’s balloons...

Can you share some of yours with me?

I don't like rich fruitcake so I borrow the Delia recipe and adjust it.

Caster sugar not brown
Sultanas not raisins or currants
Fresh orange and lemon rind grated not candied
Amarretto not sherry

Loads more cherries Xmas Grin and a bag of mixed nuts crushed up
No spices

I do like Delia marzipan , I've tried the kneading method and the one where you whisk the eggs and sugar over heat (which I feel is safer though the Amarretto will act as a preservative)

My Papa's mushroom sauce - pour in large quantities over the turkey alongside gravy and full trimmings. Also great cold later for pickings.

2 large white onions
Tub of white mushrooms
Good dollop of butter - 50-75g or so
500ml double cream
Turkey stock
Couple of teaspoons of cornflour, cold milk to mix
Salt and pepper

Drink lots of wine while cooking - because Christmas.

Chop onions very finely. The finer the better. Very small, thin, translucent slices then chop the slices down into tiny pieces no bigger than a 5mm x 5mm.

Melt the butter over a low temperature in a saucepan. Add the onions. Keep temperature low - you don't want to add any colour to them. Pop a lid on and stir occasionally so you don't brown them inadvertently. Soften completely.

Chop mushrooms into tiny tiny pieces as well. 2mm x 2mm would be ideal, but as small as you can be arsed! Mix into soft onions.

Add turkey stock. Quantity variable depending on what you can give up when sharing it with the gravy!
Add the cream. Salt and pepper to taste.

Keep temperature low, bubbling up slightly. Mix cornflour with cold milk in separate mug / bowl. Stir mixture into pan. Allow sauce to thicken while stirring gently.

Sauce should be a nice thick mix, but still pour well. Bloody lovely but don't expect kids to like it. I hated it until I was about 24.

Absolutely, pour liberally over the turkey, but also alongside the gravy, as you'll still want that on the roasties etc.
