Eek! Iced and cut Christmas cake but it's not cooked through..

Aaarghh!! DD made a very expensive and very alcoholic Christmas cake way back in Oct. She baked it for the time stated on the recipe but I asked on here (had my doubts) and people said it wouldn't be cooked through so we put it back in till the top and edges were starting to 'caramelise' so she took it out. Outside chunks are fine but middle ones look undercooked. She did pierce it with a skewer at the time and it came out clean.
What can we do? Take marzipan and icing off and wrap in tinfoil to remake? Or tell people to blitz in microwave?! Dd abut upset as she loves baking it and giving it up people for Christmas!! None of us eat it so it's used as Wee gifts for people.

I don't think you should give it to folks tbh, it's probably been fermenting away!

If you really cannot bear to chuck it, then maybe cut out the raw bit, and then see

but semi raw cake that has been festering for two months or more would not be my idea of a nice wee gift!

That's why I've not given it out! My mum tried some and said it tasted lovely but was just a wee bit underdone. Think I'll bin it!! Don't want to be giving anyone food poisoning over Xmas!!

It doesn't look raw, just a bit lighter in colour and stodgier than the outer bits. If it looked def raw it would have gone in the bin straight away!

My late DDad would have begged to have a slice of your DD's cake. He loved it best when slightly underdone. :)

Don't eat the underdone bits but it doesn't sound that bad. Is it just the middle that's soft? I'm sure it's fine.

Cut the centre out using a pint glass or small cylindrical object. Repair icing so it looks like a wreath

my middle gets stodgy from putting lots of brandy in. Could it be from that?

The middle of ours is always a bit soggy moist. How long was it cooked for?

I still treasure the memory of an undercooked Christmas Cake when I was about 7. Icing made a sort of cup and the gorgeous soft cake mix could be eaten with a spoon.

Over 30 years later and it is still the best cake I have ever had.

Thank you DrMadeleine! My dad apparently loves it! Yep, she has tipped a whole half bottle of brandy I. It!! During the baking then injecting it with a calpol syringe since Oct!
I am not a baker - hence dd making the cake! I was just going to bung it back in the oven to make sure it was thoroughly cooked!! But hadn't thought of 'fermentation' and just assumed it was cooked enough and the brandy would make everything ok!!
