Gammon in a slow cooker with no cola

Can anyone help me out with some directions (easier the better, I am not a naturally good cook) for doing a gammon in a slow cooker? Just realised I won't be able to fit it in the oven tomorrow.

The catch is that dp has Crohns disease and cannot have any sugar at all in his diet so any recipes involving cola or sugary glazing are out. I've done gammon before with mustard but that was in the oven and I've lost the recipe anyway.

Can anyone help?

Pop a few bay leaves and black peppercorns in the water, skim it off twice at least as water comes to the boil, then glaze with soy sauce and five spice to roast for the last 45 mins. Twill be lovely!

Put in slow cooker with just enough water to cover the bottom of the slow cooker dish. Will be lovely as long as you don't over do it - it gets a bit too soft if you do that.

I put some stock veg in with mine, carrots, onion, celery, peppercorns, bay and then a few inches of water.

A dash of apple juice would do - but water with bay leaf and star anise is nice too.

I always do mine in apple juice ... would that be ok?
I put in cloves coriander seeds , bay leaf , peppercorns celery sticks and an onion halved .
In a big pan bring to boil then simmer really slowly for an hour or so then leave to cool in the juice.. its always lovely..

I put mine in the slow cooker with water, peppercorns, bay leaves and some cloves.
I put enough water to barely cover the ham.
Mine weighed just under 3 kgs, I cooked it for 7.5 hours on the low setting. I've never done the ham in coke or apple juice, sounds too sweet for me.
We'll have it cold tomorrow, it looks lovely.

Water with bayleaves, a chopped onion and black peppercorns, maybe a couple of cloves, I don’t like the idea of cooking it in a sweet liquid.

I can't do apple juice due to the sugar, think I'll try water with peppercorns, bay leaves and cloves as I have those in.

How long should it take do you think?

I've got a gammon joint for Boxing Day and am not a big SC lover but think if there's a dish that'll work it's a slow cooked ham. I think I'm going to go for water covering bottom of SC and a couple of bay leaves simplicity.
Question is skin/ fat side up or down for slow cooking?

I use reduced sugar apple juice with chopped veg and a bay leaf. Leave on low all day and then put in the oven for the crispiest skin
